Yes, put foil loosely over it until about 1/2 hour before done. Remove foil and let it brown.

I made a wonderful duck for Thanksgiving. I used an apple/orange stuffing. Regular bread stuffing but used chopped Grannie Smith apples and freshly grated orange peel and no onion.

I served it with wild rice and a carrot/pineapple/raisin salad. Everyone loved it.

Yes, tent it like you would a chicken , and untent for last 30 minutes to brown....Remember, duck is very rich, so have simple side dishes to complement, or everyone will have a stomach ache....

this night i'm having us of a variety beef ribs on the grill with asparagus, sparkling salad from my herb backyard and a yummy salt pro grilled potato!!! yummmmmmmmmmmyyyyyyy i can't wait,,,,final night became Flank steak on the grill and shrimp which i do no longer thoughts asserting became freaking delicious.!
