carrots, brocoli, potatoes, parsnips? can i peel and chop any of these and leave in water over night or should i wait till morning (not my favourite option as i would like to spend as little time in the kitchen as poss on xmas day). any tips?

None of the Christmas-type veggies will go brown if left in water - only those that are left open to the air or need an acidic bath would turn brown.

I also chop and leave potatoes and parsnips in water over night, however I do always add a splash of milk to the water which keep them looking fresh.

You can peel any vegetables and leave in cold water overnight. Just remember drain the water off and fresh water and a little salt if desired before cooking them. So you can enjoy less time in the kitchen the next day! Happy Christmas ! x

YOU ONLY NEED TO COVER carrots with water all the rest will hold better without water parsnips are the first to turn brown so leave them until needed .

They'll all be fine mate, cover in cold water, and when you get up, throw the water off and cover with fresh - i do this every saturday night as we always have a houseful of guests for sunday dinner - usually at least a dozen people

Also you could make up your sauces and stuffings, put your bacon and sausage garnishes ready, dress the turkey (don't stuff it, it takes longer to cook, just put an onion and half a lemon inside carcass)

Yes you can pre chop all of these. (Potatoes should be covered in water) The biggest time saver is Carrots, Onion and Celery. Beause most people cook with those three all of the time (around the meat, in the stuffing, in the soup, etc.)

You can chop up all of them the night before, put them in a nicely sealed bag in the fridge overnight. I don't know about parsnips, but the rest of those shouldn't turn brown overnight at all.

Everyone says cover them with water, and this will work. But I believe that water leaches the vitamins out of veggies, so while it doesn't matter once a year at Christmas (who worries about vits at Christmas?) it's not a good idea to do this regularly.
