Coffee Marinated Steak
3 cloves of garlic
1 shallot
1/4 cup balsamic vinegar
1/4 cup dry white wine
1/3 cup olive oil
1/8 cup strongly brewed coffee
1 sprig fresh rosemary
¼ teaspoon dried thyme
1 bay leaf
1/2 tablespoon kosher salt
2 steaks, good cut - 3/4 pound
Roast garlic and shallot in 375 F oven, wrapped in foil and drizzled with olive oil, for about 35 minutes (you'll know when it's done it smells divine).
Squeeze garlic from skin (it will be very soft) and remove skin from shallot - put into glass bowl. Add all other ingredients except steak. Mix to combine and pour into a zip-lock bag. Add the steaks and marinate for 4 to 5 hours or longer in the refrigerator.
Grill to your taste.

Here's two.
MEDITERRANEAN MARINADE
1 pint olive oil
6 oz. soy sauce
Juice of 2 lemons
4 cloves garlic, minced
1 teaspoon chopped rosemary
Half teaspoon coriander seeds, ground
Half teaspoon fennel seeds, ground
Half teaspoon onion powder
Salt and pepper to taste
Measure the coriander and fennel seeds first and then grind them. If your coriander and fennel is already ground, use a little less than a half teaspoon.
POBLANO PEPPER MARINADE
I like this one for beef and pork, done spicy and Latin style.
1 cup water
One third cup white wine vinegar
Two poblano peppers, chopped
Three oz. onion, chopped
Two cloves garlic, chopped
One teaspoon cumin
One teaspoon coriander
One teaspoon salt
Half teaspoon black pepper
Small batch of cilantro, chopped
Combine all of the ingredients except the cilantro in a saucepan. Bring to a boil and then simmer for eight minutes. Puree in a blender. Chop the cilantro by hand and add it to the puree. Place in fridge until it reaches room temperature and add the meat.

Depending on the quality of steak, fat content and texture, there really is no reason to marinate the meat. Just good old salt and pepper. You can always offer Worcester or A1 sauce on the side.

Go to your local Dollar General or Family Dollar store & look for "Louisianna Supreme" marinade.....Same type flavor as Dale's, but nowhere near as salty.....If you are @ home & can't get to the store, mix up some worchester sauce, maple syrup, mustard powder & garlic....Marinate for at least 20 minutes before grilling.....

Steak should be cooked over charcoal, and seasoned with a pinch of salt, and some fresh cracked black pepper.....Adding marinade, ketchup, or cooking it over a gas flame will earn you a "BROKEN HAND" in this house !
