Mix thyme and sage into softened butter and spread this mixture between the skin and meat esp. the breast area. Season the cavities with lots of salt and pepper to include all the outside of bird.

Woody herbs work better than soft ones. So Thyme and Rosemary plus sage are classics.

Rub some butter inside, or even some olive oil. Season with salt and pepper. Slice an orange and a lemon in half (or an apple if you like instead of an orange) pop these inside. Slice an onion in half (I never bother to peel it) Now stuff in some herbs (I never bother to chop or remove leaves from stems or anything)

Will give the bird a fab taste and stay very moist,

A lemon and an onion, plus whatever herbs you are adding to the stuffing you are cooking separately. Some people put an apple in as well.

If you don't like stuffing try peeling an onion and putting that inside, whole. It will provide a good flavour as it will permeate throughout whilst cooking.
