Meatloaf
1 1/2 pounds freshly ground beef
1cup quick-cooking rolled oats
1/2 cup chopped onion
1 teaspoon salt
2 teaspoons pepper
4 eggs, beaten
1/3 cup catsup
2 tablespoons firmly packed brown sugar
1 tablespoon yellow prepared mustard
Preheat the oven to 350. Combine the ground beef, oats, onion,
salt, pepper, and eggs in a bowl and mix thoroughly. Pack firmly into
a 7 by 11-inch pan. In a small bowl, combine the catsup, brown sugar,
and mustard, and pour over the meatloaf. Bake for 1 hour and 15 minutes,
until the sauce has deepened in color and appears dry, and cracks have
formed on top of the meatloaf. Let stand for 5 minutes before slicing.

AND I also suggest meatballs as well.....
RECIPE: BIG BATCH OF MULTIPURPOSE MEATBALLS
Category: Freeze-ahead, beef
INGREDIENTS:
12-ounces tomato sauce
1 1/2 cups dry bread crumbs
4 eggs, lightly beaten
1/2 cup onion, finely chopped
1/4 cup green pepper, finely chopped
1 teaspoons salt, optional
1/8 teaspoon dried thyme, crushed
1/8 teaspoon dried marjoram, crushed
4 pounds ground beef
DIRECTIONS:
In a large mixing bowl, combine first eight ingredients.
Add ground beef and mix well. Shape into meatballs (use
a small cookie scoop if available) and place on broiler
pan so grease can drain while cooking. Bake uncovered in
350 degree oven for 30 minutes. Divide into meal sized
portions. To prevent from freezing into a solid meatball
mass, freeze individually on cookie sheets and then place
in freezer bags. Label then freeze. To serve meatballs,
thaw completely, and reheat with your choice of sauces.
Yield: 4 dozen

1 cup shredded Cheddar or mozzarella cheese
1 tablespoon minced fresh parsley
1 teaspoon dried basil, thyme or sage (optional)

In a large bowl, beat eggs. Add milk and bread; let stand until liquid is absorbed. Stir in the onion, carrot, cheese and seasonings. Crumble beef over mixture and mix well.
Shape into a 7-1/2-in. x 3-1/2-in. x 2-1/2-in. loaf in a shallow baking pan. Bake, uncovered, at 350 degrees F for 45 minutes.

Take 1 lb of hamburger, add salt, pepper, onions and green peppers (chopped) and 1 or 2 eggs. Then add crackers, crushed up. Then add 1 small can of tomato sauce, all but 1/4 of it. Mix with hands and shape into loaf and place in baking dish. Bake at 350 degrees for about 45 min. to 1 hour. When done, top with remaining tomato sauce and place back in oven for approx. 10 minutes. It comes out very good and delicious!! Good Luck!
Its quick and easy.
