You just need to make sure that they have been cooked properly. They need to cook for at lease 10 - 15 minutes after the water is boiling. Then you CAN take them out and put them in cold water but i don't always if i don't have the time. Just drop the egg a few times on the table to make a few cracks and then the peeling should be a piece of cake. I have never had trouble peeling hard boiled eggs.

Eggs:- Peeling After boiling your eggs, drain them and put them into cold water, or run under the cold tap. 1. Take one egg and tap on its end breaking into the shell, then tap it on the other end breaking into the shell. 2. Now roll the egg shell on its side, on your counter to smash the shell up completely. 3. Start by removing the shell at either end, making sure to get the inner membrane along with the shell itself. 4. AND now carefully pull the remaining egg shell off easily and completely. No more hunt and pick trying to peel and boiled egg anymore. THE SECRET IS COOLING THEM then smashing the shells up completely. Older eggs will peel easier than fresh eggs.

Put about 2 teaspoons of salt into cold water. Place eggs in pan, make sure they are completely covered with cold water. Bring gently to a boil uncovered. Boil about 5 min. Turn off the heat and let eggs sit until water is cool. Crack each egg all over and peeling will slip right off when coaxed.

As soon as the eggs are finished cooking, immediately pour off the hot water and run cold water over them. Peel immediately.
It's leaving them sit that causes the shell to kind of vacuum seal to the egg.
I'd only put about 10 of them into the cold water at a time, while leaving the others in the hot water, and peel them immediately. Do the same thing with the next 10, etc.
I'm a professional cook and had to deal with this problem many times. This always worked for me.

I buy em, wait 2-3 days before boiling, I boil 20-30 min. Run under cold water til water stays cool then put ice cubes in....Let sit hr or so and I have NO trouble whatsover.....
Ive also heard and tried is after boiling run under cold water and when the eggs are touchable not cold put a pin hole in the shell then soak again under cold water. Seems the water creates a lubrication between egg and shell..
Trial and error really is best way each has own way... Good luck

Try buying the eggs a week before you want to use them. I also am a chef and it is my understanding that air builds up in the space between the shell and the membrane as the egg ages, making it easier to shell. Then use a teaspoon not your fingers to peel the shell away.

allow the eggs to completely cool run under cool water and tap the on the side of the sink all over the egg. only peel while runningunder cool water. the shell comes off in one piece mostof the time. It is much faster

The only easy way i know is as soon as they are cooked, take them out of the boiling water and drop them straight into cold tap water and they normally peel quite easily. Hope this helps.

I don't know if this will definitely work, but try to put some salt in the water as the eggs are boiling. My aunt use to do this, and she never complained about unpeelable eggs.

Buy your eggs two weeks ahead of time. Fresh eggs almost always stick to the shell.
