David, I can tell the difference. But a lot of people can't.
There is a restaurant in town called the Chicken Pie Shop. It has been in business for 50 years. About 20 years ago people found they were using turkey because it was cheaper. Noone stopped eating there because the pies were still really good (and inexpensive).
Also, why the deception? Tell em the truth.

No. It would just be chicken pot pie. Do you think they would care? If they would care that you used chicken instead of turkey, then I don't suggest doing it.

Most people can't tell the difference. SOme might be able to depending on how much meat they've eaten and therefor are able to tell the difference. Just do it and see what happens. If anyone questions what type of bird it is, just call them crazy and tell them to finish the pot pie!

Yes they would notice, they taste completely different. Be honest with the guests and tell them otherwise they might think there is something wrong with the food you have prepared.
