Crab Stuffed Mushrooms

Ingredients:
1 lb cooked Gorton's Fresh Crabmeat
1 cup grated cheese
1 Tbsp Worcestershire sauce
1/2 cup scallions, chopped
2 lb stuffing mushrooms
olive oil
paprika

Directions:
1. Mix Crabmeat, cheese, Worcestershire sauce and scallions until well blended.
2. Wash mushrooms and remove the stem.
3. Rub mushrooms with a small amount of olive oil. Place mushrooms on cookie sheet.
4. Stuff each mushroom with mixture and sprinkle a little paprika on top.
5. Bake at 400°F until stuffing is brown and bubbling, 8-10 minutes.

Stuffed Mushrooms

Ingredients:
24 large mushrooms, 1 1/2 to 2 inch diameter
3 tablespoons butter
1/4 cup finely chopped onion
1 teaspoon Worchestershire sauce
3/4 cup fresh breadcrumbs
3/4 cup shredded Cheddar cheese
Salt and pepper



Directions:
Wash and dry the mushrooms. Remove the stems from the mushroom caps. Reserve the mushroom caps, and finely chop the stems.

Heat the butter in a skillet. Add the chopped mushroom stems and the onion. Saute until they are soft. Remove from heat, stir in Worchestershire sauce, breadcrumbs, cheese and salt and pepper.

Prepared mushrooms may be refrigerated for up to 24 hours. When ready to serve, preheat oven to 350 degrees. Place 1/2 cup water in a shallow pan. Add mushrooms to dish. Bake about 20 minutes. Serve hot.

1/4 tablespoon Worcestershire sauce
1/4 cup soft bread crumbs (see below)
1/4 cup shredded sharp cheddar cheese
2 tablespoons water
salt & pepper to taste
PREPARATION:
Preheat oven to 350°. Wash mushrooms quickly under running water; drain on paper towels. Pull stems from mushrooms and chop finely. Melt butter in a skillet over medium-low heat; add chopped mushroom stems and onion. Sauté until tender.
Stir in Worcestershire sauce, soft bread crumbs, cheese, salt and pepper. Sprinkle salt over mushroom caps and fill with sautéed mixture, mounding over the top. At this point, you may cover and refrigerate these mushrooms for up to 24 hours. Before serving, put 2 tablespoons of water in a shallow dish and arrange stuffed mushrooms in dish. Bake for about 20 minutes. Serve hot.
Makes 8 to 10 appetizers.
Soft bread crumbs: Put bread on cutting board and use fork tines to tear off crumbs, or use food processor to make finer crumbs. One slice bread makes about 1/2 cup lightly packed crumbs.

This is a simple one.

10 large mushroom (stems removed)
1 tablespoon grated Parmesan cheese
1 tablespoon dried breadcrumbs (whole wheat bread or oat bread)

Ricotta and herbs filling
1/2 cup reduced-fat ricotta cheese
3 sun-dried tomatoes, soaked in warm water until soft, chopped
1 tablespoon finely diced red onion
1 tablespoon chopped fresh basil
1 tablespoon snipped fresh chives
1 teaspoon lemon juice
freshly ground black pepper

1) Preheat oven to 180 degree C / 360 degree F/ Gas 4. Line a baking tray with nonstick baking paper. Set aside.
2) To make filling, place ricotta cheese, tomatoes, onion, basil, chives, lemon juice and black pepper to taste in a bowl. Mix to combine.
3) Spoon filling into mushrooms. Place on prepared baking tray. Combine Parmesan cheese and breadcrumbs. Sprinkle over mushrooms. Bake for 10-15 minutes or until filling is set and top golden.

The recipe that Shereen N gives is very similar to the one I make . It's really good, and great if any of your guests are vegetarians as it doesn't contain any meat. Sometimes I make different varieties by substituting a different cheese for the cheddar. Swiss is good and blue cheese is always a favorite for the blue cheese lovers! They're always the first thing to disappear at any parties I make them for!

Crab stuffed mushrooms! yummers!

clean your mushrooms.
buy them with tieght closed heads.
pop the stems off.

I like to microwave the mushroom heads for about 2-3 minutes before i stuff them, they get juicey, and then let them cool off
then you dab them dry and stuff them with the yummy parma cheese and soft creme cheese mixture i have below. add fine gated chedder cheese on top for color, and then you can serve them that way or microwave for 3 more mintues or bake for 15.


perpare stuffing mix
I use cream cheese, and parm. cheese and mix with shrimp or crab. you just mix it up, you can chop up the stem finely and add it to your mixture, you can add a little garlic powder if you want.
these are so yummy!!! make your filling to your taste and likes.
if it's too thick add sour cream. a little soy sauce too.

now stuff those mushroom heads, and then sprinkle the parm cheese on top, and a little shred yellow cheese for color!
and bake in oven for 15 mintutes.
OR better yet, microwave them on the serving tray for 6 mintues
let cool and serve.
