Reuben Dip Recipe

INGREDIENTS
1/2 cup mayonnaise
1/2 cup Thousand Island dressing
16 ounces sauerkraut, rinsed and squeezed dry
8 ounces shredded corned beef
16 ounces shredded Swiss cheese

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, combine mayonnaise and dressing.
Spread sauerkraut into a 9x13-inch baking dish. Layer corned beef, Swiss cheese, and the mayonnaise-dressing mixture on top of the sauerkraut.
Bake for 20 to 25 minutes.

My Reubens are vegetarian, though we do eat fish and dairy.

Take the usual grainy mustard, butter, saurkraut and Swiss cheese. Instead of the meat, add fried onions and green peppers plus some Mozzarella or limburger cheese. Toast the bread and fry the whole thing lightly, rye and all, on a grill for a couple minutes on each side. I

make mashed potatoes and boiled cabbage with butter, vinegar, sugar and black pepper to go with it. I make a potato water gravy and thicken it with grated carrots, onion, and cornstarch. Delicious!

Finely slice corned beef from the deli. Add shredded cheese, sour kraut ( well-drained), 1000 island dressing & a little horseradish....Serve with assorted crackers, breads, or toasted pita wedges......Great party idea!!
