I'm a bit of a horrible cook so the fact that convenience foods have turned Christmas dinner into an easy meal really works for me.
You can buy a turkey in a box that is pre-stuffed and has a little red thingy that pops up when it's cooked. You can buy mashed potatoes that are made from real potatoes already cooked and mashed. (although even I can make mashed potatoes from scratch *lol*)
You don't say how old your kids are. If they're old enough, they can help you make dinner. My 14 year old makes an awesome salad and he's been making the Christmas cookies since he was 4 (thanks to pillsbury).
This year, we're going to my inlaws for a traditional Christmas dinner the day after Christmas so no one feels like a turkey dinner. We decided to do steaks on the bbq this year with corn on the cob. (I lost the vote... I wanted to eat out!!)
Have a wonderful day with your kids. It's not the dinner they'll remember about this Christmas, it's the laughter and love that'll stick with them. :-)

Oooh man go to the grocery store and buy Homestyle Bakes...they're in a red box, like $3 apiece, not frozen dinners or anything, and they're super-easy to make, requiring like 5 minutes of prep time on your part (usually opening a can or two and mixing some powder with water to make biscuits) and about 30 minutes in the oven. You can make such hearty meals as turkey and sutffing, chicken pot pie, beef stew, chili and cornbread, pasta, lasagna...and while those simple but yummy meals cook, you have more time to spend with the younguns!

Ham is easy to cook, mash potatoes, green beans, rolls,mac and cheese.
Pumpkin pie (mrs smiths makes great one)and pecan pie and dont forget the cool whip.

A nice roast, with mashed potatoes, asparagus, a dinner salad, and apple pie with vanilla ice cream for dessert.

get a ham, most are cooked and all you do is heat it up.
325 for a couple hrs....just to heat it up, wrap in foil, put in pan..
mash some potatoes, add a veggie and a store bought pumpkin pie and that's good eats!! (as Elton Brown would say)

How about whatever they want, and cook it all together? I think that would be a special memory to cherish forever. Plus, kids love it when their opinions are valued and acted upon. And why not, its Christmas!

turkey (you can get a turkey breast at your local market.. its smaller and cheaper... not to mention quicker) or ham.
plus make stuffing, mashed potatoes and rolls.
