I need a quik alternative to cream of Tartar that will do the same thing.We only need 1/8 of a teaspoon so so need to buy a large amount.

If you are beating eggs whites and don't have cream of tartar, you can substitute white vinegar (in the same ratio as cream of tartar, generally 1/8 teaspoon per egg white).

Cream of tartar is an acid. It is actually a by product of the wine making process. The acid helps to make the eggs whites a little easier to beat, and stabilizes the egg whites. I have never tried the white vinegar, but it sounds reasonable to use as it too is an acid.

There is no alternative. If it is just for stabilizing egg whites leave it out and everything will be fine.

any acid including lemon juice would work
