I am happy to answer this~~~~Green Bean Casserole, Potato Salad, Mashed Potatoes, Carrots, Peas, Baked Beans, Candied Yams. Don't forget Ambrosia with chopped pecans on the side,
Pumpkin Pie, Pecan Pie, Bourbon or Rum Balls.

A eulogy or prayer would be a great side dish! Why would you want to serve the carcass of some poor abused animal for Christmas which is supposed to be a time of peace? As they say, love animals dont eat them. Show a little compassion this season and open yourself to a whole new world by going vegetarian. That way you can help your health, the environment and the animals in one easy move. Some hearty foods I like include lentil or bean soup, anything potatoes or a good home made loaf of bread. Also, if you look at some of the recipe sites that have Indian (from India) food, you will found delicious and spicy food that is fun to try. Have a Merry Christmas and may your upcoming year be one filled with joy and peace!

Cranberries, and horseradish-garlic mashed potatoes.

CRANBERRIES

Take 1 pkg cranberries, wash, and put into saucepan with 1 cup of orange juice and 1 cup of sugar. Add a bit of lemon zest and a pinch of cinnamon. Boil until cranberries break down and chill for at least 2 hours.

TATERS

Boil 2 lbs. of peeled potatoes, for about 45 minutes or until cooked through. Drain water, put potatoes into large bowl. Add 1 stick of butter, 1/4 cup horseradish creme, and 1-3 cloves of pressed garlic. 2 tablespoons salt, 1 tablespoon pepper, 1 small can of evaporated (NOT sweetened condensed) milk. Beat with rotary beaters until all ingredients are thorougly blended and potatoes are fluffy and forming peaks. If too stiff, add more milk and butter. If too runny, drain excess fluid or add 2-3 more potatoes. Wonderful!

Additoinal suggestion: serve with sparking apple cider, esp Martinelli's brand!

fiddleheads, stir fry vegetables,parmesan potatoes,squash

Heat a skillet over medium heat with a little olive oil and one onion and chopped garlic cook until onions are transparent.Take out of pan add a little more oil
Stir fry vegetables broccoli,cauliflower,green beans and sesame seeds until crisp tender stir back in the cooked garlic and onion

Sqash cut in half and put in microwave cook until fork tender .Scoop out seeds mash with fork add butter salt and pepper .warm up in microwave viola done couple of seconds to warm.About 10 minutes or so to cook in microwave...

We pick fiddleheads down the road where i live in June and freeze for Christmas it is an Canadian tradition at least in my famiy.Put frozen fiddleheads in cold water put burner on med cook fiddleheads until tender drain add salt pepper and butter ..Some people also add vinegar but i would ley everyone make up there own mind whether they wanted that addition ,

Parmesan potatoes all i do is fry some onions and garlic until onion transparent add sliced thinly potatoes and olive oil and a few dashes of butter maybe a tbsp or so always taste food as cooking to determine if you need to add more butter.Add some red pepper flakes and shredded kraft 4 cheese blend add as much as wyou would like.Grate some parmesan on top baked at 300" slowly until fork tender.You can also add fried fresh mushrooms sliced.

Candied sweet potatoes
cook butter and pancake syrup until they boil and thicken, add canned sweet potatoes, cook about 20-30 min. longer, add marshmellow and serve.
