These are Cinnamon pancakes, sounds so good.
INGREDIENTS:
4 cups quick cooking oats
2 cups all-purpose flour
2 cups whole wheat flour
1 cup non-fat dry milk
2 Tb cinnamon
1 1/2 Tb salt
3 Tb baking powder
1/2 tsp cream of tartar
PREPARATION:
Combine all ingredients and stir to mix well. Store in refrigerator. Makes about 8 cups.
Directions for cooking pancakes:
In a medium mixing bowl, beat 2 eggs. Beat in 1/3 cup of vegetable oil gradually. Alternately beat in 2 cups pancake mix and 1 cup of water. Pour in large spoonfuls into a lightly greased skillet over medium-high heat, and cook until the tops show broken bubbles, about 2 to 3 minutes. Turn and cook about 2 to 3 minutes more, until golden brown. Makes about 12 5-inch pancakes.
Not my personal recipe, i just use the add water kind. never enough time to make the real ones.

Buy Jiffy baking mix. There's a recipe for pancakes on the back. Use the one to make "richer" pancakes -- I think it's the same as the waffle recipe. It probably takes egg, milk, and a little bit of shortening or oil. For that part, use shortening -- it will make a big difference.
Maybe you don't like the kind you just add water to, but if you start with baking mix you're making a smart decision. Otherwise you'll have to buy the dry ingredients separately, and spend more money / waste more time preparing.

Here's my recipe. We make them at least once a week...
Pancakes like I.H.O.P.'s® - Simple recipe tastes just like the restaurant's feature dish.
Prep. Time: 0:20
Serves: 4-6
1 cup all-purpose flour
1/4 cup granulated sugar
1 heaping tsp. baking powder
1 tsp. baking soda
1 cup whole milk
1/4 cup vegetable oil
1 egg OR 1/4 cup egg substitute
-Combine flour, sugar, baking powder, and baking soda; set aside.
-In a separate large bowl, beat together milk, oil, and egg.
-Slowly whisk dry mixture into wet mixture until mixed well. Do not over-mix.
-Using a ladle, pour about 1/4 cup of batter at a time onto a skillet heated over a medium heat.
-When the edges appear to harden, flip the pancakes (they should be light browned); cook on the other side for same amount of time, or until light brown.

This is our family's recipe... always homemade, never add water!!
this recipe will make a fair bit, so you might need to half it or something.
3 1/3 cups flours
8 tsp. baking powder
1 tsp. salt
4 eggs, separate the yolks and whites into separate bowls
3 1/3 cups milk
3/4 cups cooking oil
Combine flour, baking powder and salt in large bowl. Make a well in the middle of the dry ingredient and add the egg yolk (slightly beaten), milk, and oil. Mix all of these ingredients until it's fairly smooth.
In a separate, deep bowl, beat the egg whites until they are stiff. Gently fold egg whites into batter mixture.
Make sure your pans or waffle iron are preheated!! Oil the pan/griddle.
With the pancakes, our family's little secret is that we like to grate cheddar cheese on top, as soon as they hit the pan... the cheese gets melted and crispy. When many bubbles form on top, flip them over!! Enjoy!!

This recipe was my great-grandmothers and was passed down to generations. Hope it becomes yours too!
1 cup flour
1 tblsp. baking powder
1/4 cup sugar
1tblsp. butter or Oleo
1/4 tsp. salt
1 egg
Milk to mix.
You don't want it real runny but not too thick so just add milk until you get the consistency you want. You can also use this for waffles too! I like to make waffles ahead and freeze them. Just pop them in toaster when you want them. Great for kids on the run in the mornings. This is for a single batch, if you want to make more, just double everything. Good Luck!!

one cup of self rising flour, add water or milk until its pudding consistency. add one teaspoon vanilla. mix well. pour into a hot skillet or flat griddle. keep your heat on low or med. do not turn you cake until you see bubbles at the top. then turn once and brown that side.
