enchilda: The enchilada is typically made with a corn tortilla which is fried briefly in hot lard or oil to soften it, and then dipped in enchilada sauce.

The tortillas are filled with any of dozens of possible ingredients and rolled up, placed in a casserole, and covered with more enchilada sauce, cheese, and onions.

Enchiladas can be filled with dozens of things depending on the cook's taste and imagination. While beef enchiladas are very popular, chicken and cheese enchiladas as well as vegetables, seafood or eggs may also be found in homes and restaurants.

taco: are not rolled or dip in sauce but are folded and add lettuce tomatoe and onions and cheese, sour cream

taquito: have no veggies something like a taco

well, they are all different.. an enchilada is rolled, stuffed and a sauce and cheese is usually put on top and baked. a taquito is usually flour or corn tortilla rolled and stuffed, then eaten like that. a taco has a filling you like with lettuce, tomato, salsa and you fold it in half. fajitas are made out side on the grill and a quesadilla is a tortilla layed out flat with fajita, cheese, then another tortilla on top and grilled inside on a comal or pan. those are the differences to me. it usually uses the same ingredients when you eat these things but the taste and method of cooking is different....

I think pirulee's pretty much got it, but from my experience, I would make these changes:

A quesadilla is a folded tortilla with primarily cheese in there, and often other stuff. Its folded really flat, and is usually fried.

An enchilada is pretty much a fried burrito with salsa and cheese on top of it.

They're all pretty similar, though. Hahaha....

TACO: is a small FOLDED CRISPY CORN TORTILLA, with the contents being some beef or chicken (or beans or seafood or whatever), cheese, salse, onion, lettuce and whatever else you may like.

a SOFT TACO: is a SOFT FLOUR TORTILLA containing the same stuff, but soft and rolled up.

a BURRITTO: is a bigger soft flour tortilla rolled up, with hugely varying contents.

a QUESADILLA: is like really similar to a burritto, but just folded, not rolled up. Contents vary heaps.

FAJITAS: are like meat or vegies or seafood cooked on a sizzling plate, then wrapped in small flour tortillas with some lettuce and guacamole (at taco bills you wrap these yourself, at some other places they wrap them for you).

an ENCHILADA: is like a softish corn tortilla folded and cooked in the oven with like cheese and onion and meat and whatever in it. very cheesy.

a TAQUITO: is a tiny little sheet of corn tortilla rolled around beef or chicken and deep fried. like a spring roll.
