Normally I cook a meat dish, a veggie (or salad) and have a side dish like pasta roni or rice a roni. I really want to get away from doing dishes like pasta ronis because they are so high in sodium and can be high in fat too.

If any one has any ideas for side dishes or knows of a good place to find reicpes I would greatly appreciate it.

Nothing is more simple then mashed potatoes. Problem is...they are sooooo boring. lol I always make a potato filling type of thing that is a step up in the world of mashed potatoes. It also goes well with everything. The method is VERY simple and measurements are to taste. So give it a whirl.

1/2 stick of butter...chopped celery...chopped onion. Saute on medium high until tender. Add some cubed bread (any kind) and saute with veggies till toasty. Fold this mixture into already prepared mashed potatoes. Salt and pepper to taste. Lovely.

Speaking of Side Dishes, I have two easy and simple recipes here which I love to make. Mayonnaise Shrimp From: Easy Japanese Pickling In Five Minutes to One Day Make 4 Servings Ingredients: 10 ounces (300 grams) shrimp 1 tablespoon soy sauce 5 tablespoons mayonnaise Method: Mix soy sauce in mayonnaise in a large bowl. Rinse shrimp. Peel and devein, leaving tails on. Chill in mayonnaise mixture 1 to 2 hours How to cook: Scrape off the marinade. Saute in a heated pan. Other Shrimp Marinades: Sesame Mayonnaise: Mix: 4 Tablespoons Mayonnaise 2 Tablespoons ground sesame seeds 2 Tablespoons Miso Onion Sauce: Mix: 3 Tablespoons grated onions 3 Tablespoons minced parsley 3 Tablespoons vegetable oil 1 teaspoon salt Coarsely ground pepper Red Cabbage with Olive Oil Marinade Makes 4 servings Ingredients: 9 ounces (250 gram) red cabbage 3 Tablespoons vinegar 3 Tablespoon olive oil 1 Tablespoon sugar 2 teaspoon soy sauce Dash of pepper Methods: 1. Julienne cabbage. Blanch and drain. 2. Mix vinegar, olive oil, sugar, soy sauce, and pepper well. 3. Toss the cabbage in the vinegar mixture. Let stand until cool. Notes: Be sure to drain cabbage very well before marinating. I love this recipe very much and made this recipe once every two to three weeks and brought to work for lunch. My co-workers finished within 15 to 20 minutes.

I like to make just a baked potato - one for each person. Put them in the mic for 7 mins then let them sit in there for like 5. You can top them with a buttery spread or sour cream.

I also love just plain brown rice. It tastes delicious (imo) and is better for you than other starches.

Egg noodles with just some parsley and olive oil or butter goes well with some dishes.

Green Bean casserole, corm pudding,Creamy masshed potatoes, Grean Bean casserole is very easy and good.
Put greenbeans in the bottom of baking dish, in other bowl add velveeta ch., cream of celery soup 1stick of melted butter,and mix
oh, and use about 3 cans of Greenbeans. 1can for bottom layer. Put mixture in middle,more greenbeans, then top it with ritz crackers.

Try slice potatoes, ranch dressing and schredded cheese. Mix all together in casserol dish and bake until the potatoes are done.

mashed potatoes with cheddar cheese and bacon bits

stir fry veggies with some teriyaki sauce

sliced tomatoes with olive oil

cook some potatoes in the oven with onion soup mix and olive oil

try a Goya rice mix (comes in a box)
