I like to just dip it into a beaten egg with a little cream mixed in (1-2 tsp) and then in bread crumbs and then pan fry in about an inch of oil till golden on each side.

Try these:
Whitefish Almondine
1 pound Alaska cod
OR
1 pound halibut, pollock, rockfish or sablefish fillets or steaks, thawed
3 tablespoons butter or margarine
2 tablespoons dry white wine
1 tablespoon lemon juice
1/4 teaspoon salt
Dash pepper
1/4 cup toasted slivered almonds
2 tablespoons minced parsley
Hot rice (optional)
1.Cut fish into serving sized pieces. In shallow microwave proof dish microwave butter at high 40 seconds or until melted. Stir in wine, lemon juice, salt and pepper. Arrange fish in dish; turn to coat with butter sauce. Cover with plastic wrap; microwave at medium 5 minutes.
2.Remove plastic wrap; spoon sauce over fish. Rotate dish 1/4 turn; cover and microwave at medium 3 minutes longer or until fish flakes easily when tested with a fork. Stir almonds and parsley into sauce in bottom of dish. Cover and let stand 2 minutes. To serve, spoon sauce over each portion. Serve additional sauce over rice.
If your fillet is not a pound, you may have to adjust the recipe.
Lemon Garlic Cod
2 tablespoons butter
2 teaspoons minced garlic
1 teaspoon lemon pepper
2 4-ounce cod fillets (4 to 6 ounces each)
Lemon wedges
Melt butter in large skillet over medium-high heat. Stir in garlic. Season cod fillets on both sides with lemon pepper. Place fillets in pan and cook for 10 minutes per inch of thickness, measured at thickest part, or until fish flakes when tested with a fork. Flip fillets halfway through cooking to brown on both sides. Sprinkle with lemon juice before serving.
Parmesan Baked Alaska Cod
3 tablespoons flour
AND
3 tablespoons corn meal
1/4 teaspoon onion salt
1/8 teaspoon pepper
2 tablespoons butter or margarine
1 pound Alaska cod fillets, thawed if necessary
1/4 cup grated Parmesan cheese
Combine flour, corn meal and seasonings. Melt butter in shallow baking dish. Dredge cod in flour mixture; place in dish. Turn cod to coat with butter; sprinkle with Parmesan cheese. Bake at 450ºF 8 to 10 minutes or until cod flakes easily when tested with a fork.
Quick Baked Cod
1/2 pound Alaska cod fillets, thawed if necessary
Salt and pepper
1 tomato, peeled and chopped
1 1/2 teaspoons green onion, chopped
1/4 teaspoon basil, crushed
AND
1/4 teaspoon oregano
1 teaspoon butter or margarine
1/4 cup shredded Monterey jack cheese
1 tablespoon grated Parmesan cheese
1.Cut cod into serving-size pieces; place in buttered baking dish. Sprinkle with salt and pepper. Combine tomato, onion and seasonings; spoon over cod.
2.Dot with butter. Bake at 450ºF 8 to 10 minutes or until cod flakes easily when tested with a fork. Sprinkle with cheeses; bake until melted.
