I would like to stay somewhere in the outback but not to rugged my dad couldent take to much.

go to ask.com and type in Outback resorts. It will bring up many options. Not knowing where you want to go I can not be more specific.
You can also get a buspass I think it is called. You can fly to two regions. So stay in the big city of Sydney and fly a day or two to the "outback" and than back to Sydney. for the pass Aust is broken down to 4 regions and the cost varies per regions
Also most of Aust has full time school and Dec and Jan for 4 or 6 weeks is their summer vacation so try to plan around when school is in season and it should be more relaxed
