It's just sausage but since it is nestles in a bread coat it's rather ugly or "toadish". The name more refers to the appearance of the dish than the taste or ingredients.

Damn. Someone has already said this...

Toad in the hole is a traditional British dish. It consists of sausages in Yorkshire pudding batter, usually served with vegetables and gravy.

In some countries, including Australia and Canada, and in many parts of the U.S., Toad in the Hole is the name of a dish that involves cutting a hole in a slice of bread, cracking an egg into it, and then frying it.[1][2] This dish (egg on bread) is also called by quite a few other names: frog in the pond, bird's nest, birdie in a basket, eggs in a basket, eggs in frames, peek-a-boo eggs, holey toast, egg in a hole, bullseye toast, one-eyed jack, egg in a window, egg on a raft, man on a raft, paddy egg, castle'd egg, special egg, knothole egg, Popeye egg, Egyptian eyes, one eyed egyptian sandwich, gibbly's willies, eggy bread, hole-in-one, scout eggs (US Boy Scouts), "eggs with hats on top" recipe book and "eggy in the basket"; this last variation featured in V for Vendetta. It is recommended, when making the egg-and-bread variety of the Toad in the Hole, to use plenty of real, salted butter as Margarine will burn and can have an unpleasant smell.
