Is it you just don't like the mushrooms? I cannot use anything that has mushrooms in it, so I just replace cream of mushroom with a cream of celery (or potato, chicken, cauliflower, etc).

I have a brother who won't eat anything with cream of mushroom soup either. So, two years ago, when he and his family were coming for Christmas, I made the green bean casserole (a Christmas staple, right!?) with cream of chicken soup and it went over very well and he continues to make it that way at his home in FL during the holidays.
Or is it the cream based soup that you are adverse to using?

!green bean casserole!
INGREDIENTS
3/4 cup milk
2 (9 ounce) packages frozen green beans
1 1/3 cups French-fried onions
ground black pepper to taste
Stir in beans and 2/3 cup french fried onions.
Bake at 350 degrees F (175 degrees C) for 30 minutes or until heated through, stir. Top with remaining 2/3 cup of french fried onions. Bake 5 minutes more or until the onions are golden.

I personally melt a half of stick of butter in a frying pan. Then I add a cup of bread crumbs. Let that mixture brown a little. Then I drain a big can of green beans and place them in the bread crumb mixture and warm through. They are fantastic.....and no Cream of Mushroom soup.
