I have lots of apples, about 2 dozens, and I am looking to find a good vegetarian recipe or apple dessert that I could use them all.

APPLE CRISP

3 pounds tart apples
2 tablespoons lemon juice
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup all-purpose flour
1/3 cup granulated sugar
1/3 cup rolled oats
4 tablespoons cold butter (1/2 stick)
1/2 cup chopped walnuts or pecans

PREPARATION:
Peel, core and chop apples, toss in a bowl with lemon juice to prevent darkening. In a separate bowl, combine brown sugar, cinnamon, and nutmeg; stir into apples. Set aside.
In another bowl combine flour, sugar and oats.

Cut butter into 8 pieces, and cut butter into flour until mixture looks like crumbs. Stir in nuts. Butter a 10 X 10-inch baking dish. Spread apples in bottom of baking dish then sprinkle with flour mixture. Bake at 375° for 30 to 45 minutes, or until apples are tender and topping is lightly browned. Serve warm or at room temperature.


APPLE DUMPLINGS
INGREDIENTS:
2 to 2 1/2 cup flour
2 teaspoons baking powder
1 teaspoon salt
3/4 cup shortening
1/2 cup milk
4 to 6 Granny Smith or other cooking apples, cored, peeled, and sliced
sugar, approximately 1/2 cup, for sprinkling apples
cinnamon
nutmeg
butter, cut in small pieces

Syrup:
2 cups sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 cups hot water
1/4 cup margarine melted
heavy cream or ice cream, optional
PREPARATION:
Combine flour, baking powder and salt; cut in shortening until mixture resembles coarse meal. Gradually add milk, stirring to make a soft dough. Roll dough into a 1/8" thick rectangle on a lightly floured surface; cut into 5-inch squares.
Place 3 or 4 pieces of apple on each square.

Sprinkle each with 2 teaspoons sugar and a sprinkling cinnamon and nutmeg to taste; dot with butter. Moisten edges of each dumpling with water; bring corners to center, pinching edges to seal. Place dumplings 1 inch apart in a lightly greased shallow baking dish. Combine 2 cups sugar, 1/4 teaspoon cinnamon, 1/4 teaspoon nutmeg, 2 cups hot water and 1/4 cup butter or margarine; stir to dissolve sugar. Pour syrup over dumplings. Bake at 375° for 35 to 45 minutes, or until golden brown. Serve hot with cream or ice cream.
Makes about 1 dozen apple dumplings.

Make a big apple crisp. Serve it warm with vanilla ice cream, and if there are leftovers they're great for breakfast!!

For that amount of apples I'd use either a large casserole dish or maybe a 9"x13" lasagna type dish.

First cut together 3/4 cup butter, 1 1/2 cup brown sugar, 1 1/2 cup rolled oats and a sprinkling of cinnamon and some nutmeg too if you like.

Then peel and cut up all your apples. (Don't worry about slicing the apples evenly, chunky is best!) Heap them in the baking dish. Sprinkle your oat topping evenly over the apples.

Bake at 350°F for about an hour, could take longer if you used a deeper dish. Just check for done by sticking a knife in the middle, when the apples are completely soft it's ready.

Just let it cool for at least 20 minutes before you serve it or else the sugary juice from the apples will burn you!!

Baked apples are delicious with whipped cream or ice cream.

Clean and core the apples with a coring tool. Lightly score the skin around the middle of each apple to keep them from exploding as they expand in the oven.

Place the apples into a baking dish and fill each hole with brown sugar and then cover with raisins. It's OK if the raisins spill over into the dish, you might like to have some extra. Add about a quarter of an inch of water into the bottom of the dish.

Bake uncovered in a 350 to 375-degree oven until done; about 30 to 45 minutes depending on the apple type and size. They are done when somewhat soft to a fork poked into the body on top.

ALL DAY APPLE BUTTER
5 1/2 pounds apples - peeled, cored and finely chopped
4 cups white sugar
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt

Place the apples in a slow cooker. In a medium bowl, mix the sugar, cinnamon, cloves and salt. Pour the mixture over the apples in the slow cooker and mix well. Cover and cook on high 1 hour. Reduce heat to low and cook 9 to 11 hours, stirring occasionally, until the mixture is thickened and dark brown. Uncover and continue cooking on low 1 hour. Stir with a whisk, if desired, to increase smoothness. Spoon the mixture into sterile containers, cover and refrigerate or freeze.

Double this recipe:

Apple Cake

1 beaten egg
1 cup sugar
4 tbsp. butter
1 pinch of salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1 cup flour
1 tsp. soda
1/4 cup nuts
3 cups raw apples, diced

Mix as given. Grease pan or baking dish 8x8, Bake 45 minutes at 350 degrees.

chop apples up boil them add lemon jiuce mash it up apple sauce and freeze it and apple crumble chop apples put in dish sprinkle with sugar make crumble one bag flour half ammount margarine mix together add sugar to form crumble place on top of apples cook till golden brown portion up and freeze
