Not to sound derogatory, but speaking from experience, since I used to have it, I would recommend Cooking for Dummies.
All the techniques and recipes are laid out to where even the most inexperienced novice can understand easily. I studied this book for hours on end when I first started learning how to cook.

The Betty Crocker Cook Book, the one I have is from 1957 it is already starting to fall apart, but my Girls like to look up recipe's, and especially the Turkey stuffing page is already in ruins, we must scan it, in order to preserve it. Try it, you'll like i t

I would try Rachel Ray. Her cook books are 30 minute meals and she has a TV show on the Food Channel.
The recipes are easy and you don't need a lot of ingredients
