/3 cup butter or margarine, softened
1/3 cup shortening
3/4 cup sugar
1 teaspoon baking powder
pinch salt
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
granulated sugar, colored if desired

Directions
Beat butter and shortening thoroughly with an electric mixer or pastry cutter.

Add sugar, baking powder and a pinch of salt and mix until well combined.

Beat in egg and vanilla then as much flour as you can with the electric mixer.

Stir in the remaining flour.

Cover and chill for at least 1 hour;

Split the dough in 1/2 and roll one half at a time. Cut out with cookie cutters.

Keep the piece you aren't using in the fridge.

Bake on ungreased cookie sheets for about 7 to 8 minutes, until edges are firm and bottoms are lightly browned (don't over cook).

Everything in my house is cooked at 325 degrees F and these are no exception *laugh*

Makes 36 cookies.

Easiest is to use the premade kind you can buy in the store... they are usually in the refrigerator section by the rolls of biscuits, etc... They even make them already cut into shapes if you want.

If not, this recipe is pretty easy:

Easy Cut-Out Cookies
INGREDIENTS
2 1/4 cups all-purpose flour
1 cup confectioners' sugar
1 cup butter, melted
1 egg
1 teaspoon vanilla extract
DIRECTIONS
In a medium bowl, combine the flour and confectioners' sugar. Stir in the melted butter, egg, and vanilla until well blended. Cover, and refrigerate dough for at least 2 hours.
Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
On a lightly floured surface, roll the dough out 1/4 inch thick. Cut into desired shapes using cookie cutters.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Simple Sugar Cookies

Ingredients (use vegan versions):

1 1/2 cup flour (I use organic, unbleached, white flour)
1/2 cup sugar (I use Florida Crystals)
1/2 teaspoon baking soda
1/2 teaspoon salt
8 tablespoon oil
1 tablespoon vanilla
1 tablespoon maple syrup
1 egg replacer
cinnamon and sugar for coating

Directions:

Mix dry ingredients in a bowl. Mix wet ingredients in measuring cup (make sure they're blended well). Stir wet ingredients into dry ingredients. Using hands, form dough into a big ball. (If it sticks together well, then its the right consistency. If not, then add a bit of water and mix it well.)

Form dough into cookie sized balls and roll into cinnamon vegan sugar mixture. Place on ungreased cookie sheet. Flatten each ball a little bit. Bake at 375 degrees for about 7 minutes.

Makes about 18 cookies (depending on how much dough you eat before you bake them!)

Try the www.epicurious.com website for their Christmas Cutouts with Vanilla Icing. I made them tonight and they turned out perfectly!
Just bake for 13 min. instead of 12. They roll out well and taste better than the pre-made stuff in the store (which tends to be dry).
