Pineapple Upside Down Cake

Ingredients

3 cn (8.5 oz size) sliced pine- apple in heavy syrup (12 slices)
1/4 c Butter
2/3 c Light brown sugar, packed
1/3 c Pecan or walnut halves
1 c Flour
3/4 c Sugar
1 1/2 ts Baking powder
1/2 ts Salt
1/4 c Shortening
1/2 c Milk
1 Egg
1 c Heavy cream, chilled or
1 pt Vanilla ice cream

Instructions

1. Preheat oven to 350F. Drain pineapple slices, reserving 2 T of the syrup.
2. In a heavy 10 inch skillet (preferably cast iron) melt the butter over medium heat. Add brown sugar, stirring until the sugar is melted. Remove from heat. Arrange 8 pineapple slices on the sugar mixture, overlapping the slices slightly around the edge of the pan. Put one slice in the center. Place the walnut or pecan halves in the center of each slice of pineapple. Arrange around the inside of the skillet edge the remaining pineapple, cut in halves. Put pecans/walnuts in the center.
3. In a medium bowl, mix the flour, sugar, baking powder and salt. Add the shortening and milk. Beat 2 minutes at hight speed or until mixture is smooth. Add egg and reserved 2 T pineapple syrup. Beat two minutes more. Gently pour cake batter over the pineapple in the skillet and spread evenly. Be careful not to disarray the pineapple.
4. On a rack in the center of the oven, bake 40-45 minutes or until golden in color and surface of cake springs back to the touch. After the cake is done, let the skillet stand on a wire rack 5 minutes to cool slightly. With a small spatula, loosen cake from the edge of the skillet all around. Place the serving platter over the cake, and turn upside down (carefully). Shake gently.Lift off skillet.
Serve with fresh whipped cream or vanilla ice cream.

As a girl who's only sucessfully made a mess in the kitchen, here a few I can do!

Chocolate No-Bake Cookies

What you will need -
2 cups sugar
1/4 cup baker's cocoa
1/2 cup milk
1/2 cup peanut butter
1/2 teaspoon salt
1 stick of butter
2 cups oatmeal
1 teaspoon vanilla.

What you will do -
Mix sugar, salt, and cocoa in saucepan.
Add butter and milk, and bring to a boil.
Cook for a minute and a half.
Rmove from heat and add remaining ingriedients.
Mix well.
Drop by the spoonful onto wax paper and let cool.

Better Than Sex Cake:
What you will need -
1 German Chocolate cake mix
1 can sweetened condensed milk
1 jar caramel ice cream topping
1 (8 oz) container of Cool Whip
1 (6 oz) crushed Heath Bar
1 (6 oz) crushed plain Hershey Bar

What you will do -
Bake cake as directed on box in a 9x13 pan.
Take the handle of a wooden spoon and poke holes all over the cake while still warm.
Pour can of milk over cake, then do the same with caramel.
Refrigerate for at least 6 hours, or overnight.
Frost cake with Cool Whip and sprinkle candy bars on top.

Hershey Pie:

1 oreo pie shell or graham cracker crust
1 (16 oz) cool whip
2 king size Hershey Plain bar

In a large bowl, melt candy (all but once piece, eat that piece)
Add cool whip
Stir until well mixed, pour into pie shell and freeze.

Basque Cake with Cherry Preserves

1 cup (2 sticks) unsalted butter, softened
1 1/3 cups granulated sugar
3 large eggs
1 teaspoon pure vanilla extract
2 3/4 cups cake flour
1/4 teaspoon salt
1 teaspoon baking powder
1/8 teaspoon pure almond extract
1/3 cup sour cherry preserves
1/4 cup sliced almonds, optional
Confectioners' sugar, for dusting

Place an oven rack in the middle of the oven. Preheat the oven to 325 degrees F. Butter a 10-inch cake pan or spring-form pan. In a mixer with a whip attachment, beat the butter until creamy. Gradually beat in the sugar until light and fluffy. Add the eggs, 1 at a time, beating well after each addition. Beat in the vanilla extract.
Sift the cake flour, salt, and baking powder together and use a rubber spatula to fold the dry ingredients into this butter mixture until a soft dough forms and no white streaks of flour remain. Spread half the batter evenly in the bottom of the prepared pan. Stir the almond extract into the cherry preserves. Spoon the cherry preserves over the batter, spreading it within 2 inches of the border.
Drop the remaining batter by large spoonfuls or pipe it with a plain tip over the preserves. Spread the batter carefully over the jam to the edge of the pan. Sprinkle with sliced almonds, if using.
Bake for 40 to 50 minutes, or until a bamboo skewer inserted into the cake comes out with a few moist crumbs clinging to it. Let cool in the pan on a wire rack. Unmold the cake and dust with confectioners' sugar.

I would say icecream cake but its a bit late now as it is christmas eve. Soften a tub of icecream by leaving out of freezer for 10 minutes, meanwhile chop up some fruits , cherries, strawberries, whatever you like, chop up a small bar of good eating chocolate and toat some almonds and cruch up a bit mix all together and put into a lined cake tin , cover with plastic and foil over the top and refreeze till firm.. Yum you can add marshmells or crushed meringues, lots of good stuff, but not too overboard.

Strawberry Trifle

6 cups strawberries, cut into bit sized pieces
1 cup white sugar
2 packages french vanilla pudding
1 angel food cake torn in 2-3 inch pieces
large bowl of cool whip

Cut strawberries into bit sized pieces, then mix in suger. Let sit in fridge for atleast 5 hours till the strawberries are soft and the juices have made a thin syrup. Make pudding according to package directions. Take a large serving bowl and put a layer of angel food cake pieces in the bottom, then a layer of the strawberries, the pudding, and then cool whip. Continue layering until you get to the top of the bowl. Make the last layer the cool whip. Best served after it has set in the fridge for a few hours so the flavors can blend.

Pineapple and Cranberry
20 ounces crushed pineapple, drained
16 oz cranberry sauce, whole berry is best
15 oz sweetened condensed milk
8 oz Cool Whip
1/4 cup lemon juice
1/4 cup pecans

Mix pineapple and cranberry sauce together. Stir in sweetened condensed milk and lemon juice. Fold in Cool Whip. Pour into a serving dish that can be frozen. Sprinkle pecans on top. Place in freezer for at least 4 hours. Remove from freezer about 1/2 hour before serving.

Buy some Philadelphia cream cheese and use the cheescake recipe that is inside the box. You will need sugar, eggs, vanilla and a graham cracker crust (which you can buy already made at the store). Buy a fruit topping of your choice to put on top or use caramel or chocolate sauce. Good luck!

Fruit Salad -

Mix together 1 bowl of Cool Whip, 1 can of condensed milk, 1 can of cherry pineapple filling, 1 can of crushed pineapple.

Its easy and takes just a few mins to make. Its also very tasty.

Ghirardelli brownie mix. Awesome! and Easy!

(1/3 cup water, 1/3 cup vegetable oil, 1 egg, 1 pack of brownie mix. Bake in prepared 9x9 baking dish or pan for 40 minutes at 325F.)

Chocolate pudding pie- just get a pre-made ghram craker pie crust, put choclate pudding in it. Add a lot of wipcream for the top and add choclate chips on the top. Quick, simple and not hard to make
