Absolutely. I do that all the time. I don't use shortening because of the transfats, so butter works great. The main thing to keep in mind is if you use salted butter, you may want to cut back just a pinch on the salt in your recipe.

Yes, typically whenever a recipe calls for shortening, butter can be used as a replacement. I have always used butter in cookies rather than shortening. Your cookies will probably taste better with the butter.

Normally I use butter in all my cookies but in Peanutbutter cookies I go 1/2 butter and 1/2 vegetable shortening. All butter in them seems to make mine spread out too much.

Yes! In fact I PREFER butter to shortening because it melts at blood temperature - hence 'melt in your mouth'. Shortening melts at a higher temperature, so a room temperature cookie might leave you with a greasy feeling on the roof of your mouth.
