Crate him/her and teach him the crate is a safe place. Put him in it when you leave. Most pups will not poop where they sleep. Make sure the crate is big enough for him to stand up, turn around and lie down it.

an 11 month old dog can hold on for some hours, but it really depends how long you are gone.
I would reccomend taking your dog for a nice long walk before heading out.
Some dogs will toilet inside whilst their owners are out due to stress.
I would suggest putting the dog out in the yard or crate training the dog.

Put the dog on a feeding schedule Take the dog outside within 20 minutes of feeding. Put the dog on a high quality dog food that is very digestible and is not full of fiber. Keep the dog confined to a small area when you are gone.

I would buy some of the gate things, that you put inside the two sides of the door, and put the pup in the kitchen or easy to clean up room. The pup will learn if you work with it.
