very yummy sugar free fudge

Ingredients:
1/2 ounce unsweetened chocolate
1/4 cup unsweetened applesauce
2 teaspoons sugar replacement
2 graham cracker square, finely crushed
1 tablespoon non-fat dry milk
1 tablespoon raisins, chopped


Directions:

Heat chocolate, applesauce and diet sugar to boiling in small saucepan. Boil for 2-3 minutes to thicken, stir constantly. Remove from heat. Combine graham cracker crumbs, non-fat dry milk and raisins. Add chocolate mixture; mix well. Place on wax paper and shape into two 2 x 2 x 1/2 inch squares or form into a square that is half an inch thick. Chill and serve directly from refrigerator.

Wow, that is a little hard since sugar is pretty essential to fudge, besides the fact the butter and chocolate.
But seriously, unless your doing it for someone with diabetes, in which case I would say fudge is NOT the way to go, I would just relax and let yourself indulge for the holidays. Make a regular batch and just limit yourself to a piece or two. Share it with others so it doesn't last long.
About the best thing I do, and it is only because it is better for the recipe, is using evaporated milk and not sweetened condensed.

1/4 cup butter
2 ounces unsweetened chocolate
24 (1 g) packets sugar substitute
8 ounces cream cheese
1 teaspoon vanilla
1/2 cup chopped pecans (optional)

Melt butter in small saucepan, or microwave.
Stir in chocolate until melted.
Add sugar substitute and vanilla, mixing well.
Combine cream cheese and chocolate mixture until it is completely mixed; may use the mixer if you want.
Stir in chopped pecans.
Spread in an 8-inch square pan that has been greased well with butter.
Refrigerate until firm and cut into 1-inch squares. Store in refrigerator
