Technically you're supposed to use "kitchen twine." This is something I almost never have on hand. I use hemp string that I keep to make my necklaces with. ANy sturdy natural string will work. Remember Bridget Jones and the blue soup? That is a perfect example of why you shouldn't use waxed or colored string when cooking! :)

Any kind of twine or very heavy thread will work. Kite string would work very well, especially if it is the heavier test stuf you can find at hobby stores. Also check a craft store like Hobby Lobby for suitable string. If worse comes to worse, cut about four inches from a wire coat hanger, and bend it around the nobs.

if its a frozen turkey then the legs should already be tied together with a metal or plastic clip. that is what they hang the bird with while they are processing the meat.

you can use cotton string, i use regular old twine, poke holes in the cavity of the turkey to lace that up too if you are stuffing it.

yarn usually has dye colors in it and could be made from nylon too. Not so good in an oven!
