Without knowing where you are, or bothering to look, here in the USA and HD or Lowes can supply all you can pay for.
I've been in this business a long time, and have to say your choice for surfaces isn't any I'd advise. Extensions need not be more that that detestable substance MDF, or better. As a Router table top, in which you must intend to mount a router upside down, I suggest keep your money in your wallet until you find very Specific "tables" made for just such a purpose,,,OR,, look for a Table saw that someone is begging to get rid of, strip it, and mount the router underneath.

Go ahead and hit some of the HD, Lowes etc and look for sink cut-outs. They usually sell them in the back for a buck or two. If they are out, then hit some countertop installers. They will have scads of them, and since some of the new sinks are quite large, you will find some pretty substantial cut-outs. If you have a large router, you may need to reinforce the back of the cut-out. If you need larger pieces for the table saw extensions, you may find the countertop shop a great source for returns or rejects for full and partial pieces. The colors may be wild, but it will be very cost effective. Good Luck.

Try using a kitchen worktop off cut. It works well for me. Drill a hole of the size you need.Turn it face down lay your router centred over the hole draw around the router face plate if the worktop is 40 mm cut out with router 25 mm. If a 30 mm cut out 15 mm

try a tile shop .NO i mean it .they sell ply sheets with laminates on them ..up to 1200mm wide they are called either wet wall or mermaid board ..they are normally used for walls in showers ..a bit expensive .OR go to a laminate supplier .they do peninsular unit work tops..
