Marinate it over night in fridge with this mixure: chopped onions, chopped garlic, little salt, black pepper, little cinnamon powder, little mustard. Cover it with plastic to avoid odor in fridge. Put it in a preheated oven at 350 dgrees. Turn it after 40 minutes. When brown cover it with foil. Wait till tender. It will take about 2 and a half hours in oven.

Cut a few small slits all over the meat, not too deep, and put garlic cloves in the slit. Sprinkle lamb with salt and top with a few slices of bacon. Roast at 325-350 degrees F (165-175 degrees C) until the lamb is cooked to medium well. Be careful not to overcook the lamb, it tastes better if the meat is still slightly pink. My mother and I love roast leg of lamb done this way.

My favorite way to do leg of lamb (either bonein OR boneless)
is Tuscan style. You need to make a rub with 3 cloves garlic, the zest of one lemon, 2 tsp lemon juice, 3 tbsp fresh rosemary, 3 tbsp grainy dijon mustard, and 3 tbsp olive oil. Rub it all over the lamb, sprinkle generously with coarse grain sea salt, and cook it low and slow until medium. Lamb is one meat that doesn't really lend itself to cooking well, so medium is as far along as I'd go.
