What makes this easy is that you prepare it the night before baking.
8 slices white bread, crusts removed
8 eggs, slightly beaten
1 cup milk
2 teaspoons dry mustard
1 teaspoon dried minced onion
12 to 16 slices bacon, cooked and crumbled
2 cups (8 ounces) shredded mild Cheddar cheese
PREPARATION:
Place bread in a lightly greased 9x13-inch baking dish; set aside. Combine eggs, milk, dry mustard, and dried minced onion; pour over bread. Sprinkle bacon over casserole; cover and refrigerate 8 hours.
Remove from refrigerator; let casserole stand 30 minutes. Preheat oven to 350°. Bake, covered, for 35 to 45 minutes, until set. Uncover, sprinkle with shredded Cheddar cheese, and bake an additional 5 minutes. Let breakfast casserole stand 5 to 10 minutes before serving.
Breakfast bacon and egg casserole serves 4. Can be doubled.
This sausage egg, and cheese casserole is a great recipe for a Christmas morning breakfast. This colorful casserole is also a wonderful addition to any holiday brunch. The ingredients can be mixed together the evening before, then stored in the refrigerator overnight.
12 eggs
1 tsp. canola oil
1 lb. breakfast sausage - either break up sausage patties or remove the casing from link sausage.
1/4 cup green bell pepper - finely chopped
1/4 cup red bell pepper - finely chopped
1/4 cup onion - finely chopped
1/2 tsp. salt.
1/4 tsp. pepper
8 oz. grated sharp cheddar cheese
1/2 cup milk
6 slices white or light wheat bread - cubed
Preparation -
In a large mixing bowl, beat the eggs well using a wire whisk; set aside. Pour the canola oil into a skillet. Saute' the sausage meat, chopped red and green bell pepper and chopped onion until the sausage is cooked. Pour off the excess fat, then place the mixture on a plate lined with white paper towels to drain completely. Stir the sausage mixture into the beaten eggs. Add the salt, pepper, grated cheese, milk, and bread cubes. Butter a shallow (oblong or oval) casserole dish. Pour the mixture in the prepared casserole. Cover and refrigerate overnight. Bake in a preheated oven at 350º for 45 minutes or until set and very lightly browned. Makes about 8 servings.

Preheat oven to 350°.
Spray or grease a two-quart casserole dish with cooking oil.
Ingredients:
12 eggs
1 cup plain yogurt
1 teaspoon Lawry's seasoned salt (or, to taste)
3/4 stick butter or margarine
2 cups shredded hash brown potatoes (thawed)
1/4 cup (or less) chopped onion
1 cup grated sharp cheddar cheese
Beat eggs, yogurt, and salt together.
Melt butter and lightly sauté onion. Add thawed potatoes. Stir to mix.
Pour in egg mixture and lightly stir to blend ingredients.
Pour into casserole dish. Sprinkle grated cheese over casserole.
Bake at 350° for approximately 25 minutes or until knife comes out clean when inserted.
Cut into 8 squares.

Baked French Toast Casserole
1 loaf French bread (13 to 16 ounces)
Butter, for pan
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons sugar
1 tablespoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Raspberry Syrup, recipe follows
Slice French bread into 20 slices, 1-inch thick each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices.
In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.
The next day, preheat oven to 350 degrees F. Spread Praline Topping evenly over the bread and bake for 45 minutes, until puffed and lightly golden. Serve with Raspberry Syrup.
Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Combine all ingredients in a medium bowl and blend well. Spread over bread as directed above.
Raspberry Syrup:
1 cup raspberry preserves
3 tablespoons water
2 tablespoons raspberry liqueur (recommended: Framboise)
Combine ingredients in a small saucepan and place over medium heat. Stir until warm and thinned out like syrup.

Hashbrown Casserole
1 1lb. pkg. shredded potatoes
1 small onion - diced and sauted
1 can condensed cream of chicken soup
1 cup sour cream
2 Tb. melted butter
2 C. shredded cheddar.
Chex cereal crumbs
Mix everything together (except cereal crumbs). Add salt and pepper to taste. If it seems too thick, add a little cream or buttermilk. Top with the cereal crumbs. Bake at $350 for 45-55 minutes

Stir Bisquick mix, milk, pepper and eggs until blended. Pour into baking dish.

Here is one that only takes 15 minutes to prepare and its ready in about 25 to 30 minutes.
Bacon/Cheese Pull-Aparts
1 egg
2 tblsps. milk
1 can Grands Biscuits
1 pkg. precooked bacon, cut into 1/2 in. pieces
3/4 cup shredded Cheddar Cheese
1/4 cup chopped green onions
Heat oven to 350 degree. Spray 11x7 or 12x8 in. (2 qt.) baking dish with cooking spray. In large bowl, bet egg and milk with wire whisk until smooth.
Separate dough into 8 biscuits; cut each into quarters. Gently stir pieces into egg mixture to coat evenly. Fold bacon, cheese, onions. Spoon mixture into sprayed dish; arrange biscuit pieces in single layer.
Bake at 350 degrees for 23 to 28 minutes or until golden brown. Cut into squares.
Serves 8
