since the middle of it isnt as cooked as the outside, isnt it unsafe becuz it mite have salmonella

These cakes are properly called Fondant cakes and don't contain egg. They are perfectly safe though a bit tricky to make without over cooking and ending up with a brownie. Most of the recipes you find online are poor recipes that are simply raw cake batter. My recipe is for restaurant use and makes 200 so it won't do any good but keep searching, you should be able to find one out there.

Yes, and eggs are not the only carrier of food borne illness. Uncooked/undercooked flour is also a culprit, carrying both Salmonella and E. coli. Researchers have found that out based on an outbreak in 2009 from people eating raw cookie dough purchased from grocery stores. All of the ingredients except for the flour and the chocolate chips had undergone pasteurization/heat treatments prior to making the dough.

The internal temperature of the lava cake must reach 165 degrees F to have successfully killed all bacteria. Stick a thermometer in the middle to test it. Personally, I'd never order one in a restaurant because I can't be certain they tested them.
