Combine cinnamon and sugar; set aside.
Pour oil 2" deep in med.
skillet; heat to 375.
Cut each tortilla into 8 strips, each approx 1" wide.
Fry 3-5 strips at a time until golden brown and crisp, turning once.
Remove and drain on paper towels.
Sprinkle with cinnamon mix while still warm.
Serve immediately.

INGREDIENTS
1/2 cup butter, softened
1/2 cup shortening
1 1/3 cups white sugar
2 eggs
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
2 1/2 cups cornflakes cereal
DIRECTIONS
Preheat oven to 400 degrees F (205 degrees C).
Crush the cornflakes (should yield about 1 1/4 cups).
Cream the butter or margarine with the shortening. Add the eggs and the sugar and beat until fluffy. Stir in the flour, cinnamon and baking soda, mixing well. Stir in the corn flakes.
Drop by spoonfuls onto ungreased cookie sheets and bake at 400 degrees F (205 degrees C) for about 9 minutes or until light brown. Let stand for 1 minute then cool on wire racks.

I think you are actually looking for a recipe for the extruded puffy crispy things with cinnamon sugar on them that Taco Bell sells. They are made with cornmeal in a way similar to the way puffed Cheetos are made but they have the sweet topping instead of cheese added after frying. Unfortunately, this is a recipe that is not possible to duplicate without expensive equipment. Sorry, but at least they are cheap at the local Taco Bell.

Simply buy regular tortillas (white or wheat) then cut in triangles (use a pizza wheel or a large chef knife to make them even) Deep fry in vegetable oil for about 15-20 seconds until the float to the top - remove to paper covered plate to drain coat with cinnamon sugar while still warm (to completely cover put cinnamon sugar in paper bag add chips and shake). Good Luck!

here is a very simple recipe for what you are looking for
INGREDIENTS
32 (3.5 inch square) wonton wrappers
1 1/2 tablespoons margarine, melted
3 tablespoons cinnamon sugar
DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C).
Lay the wonton wrappers out flat on a baking sheet. Brush evenly with melted margarine. Sprinkle 1/4 teaspoon of cinnamon sugar over the top of each one.
Bake for 5 minutes in the preheated oven, or until crisp. Remove from baking sheets to cool on wire racks.
