canola oil is vegetable oil. If you ever buy the cheap generic cooking oil at the market it's probably soy bean oil, which is also a vegetable oil. So is corn, and flax. Canola is usually used by health conscious people because it's lighter in saturated fats. Peanut oil is really good for frying at high temperatures because it has a high smoking temperature. That's the point that you see light smoke rising when you heat it in the skillet. In the Mediterranean diet lots of olive oil is used, it's the healthiest of all, but you can't fry with it. Well you can at low temps, and there is no need for the extra virgin olive oil when cooking with it. For other purposes extra virgin olive oil gives the best taste.

They are both vegetable oil..From experience I can tell you that corn oil is dirty to use. When it spatters on things, wall, stove top and the side of the pan it becomes gummy and hard to clean..I use peanut oil for everything. It is clean, takes high temps without burning. If peanut oit is smoking it is way to hot to cook anthing in. I use it for fry cooking, deep frying, and even for cooking donuts. Not cheap but if you use a lot or share with a friend you can buy PURE peanut oil at BJ's or other srores in 4 gal. containers. If you buy it at the grocery store a pint and a half cost near $3.00 if you buy the large 4 gallon +size at BJ's it is only $24.00..If you like it share it with some friends. By the way it does not really need refrigeration. Don't leave it in the sun but the cellar works for me.

Vegetable oil may be made from a single ingredient or a blend of several. Refined oils are recommended for high-heat frying. Unrefined specialty oils are generally better tasting in salads and other cold dishes.
Corn Oil: A pale yellow liquid obtained from the embryos of corn grains, used especially as a cooking and salad oil and in the manufacture of margarines.
