I would go with cupcakes.... buy a can of frosting and some colored sprinkles....very simple and yet kind of elegant looking! And you know exactly how many you need to make serving wise! one per person!

This is EASY recipe and well loved in my family.
Dump Cake
Dump in a well greased 13x9 pan or in an angel food cake pan, these ingredients in this order:
1-24 ounce can of cherry pie filling
1-15 ounce can of CRUSHED pineapple (not chunks or slices) -- do not drain, pour the fruit and juice into the pan
1 box of white or yellow cake mix
2 sticks margarine or butter, sliced
Optional 3/4 cup chopped nuts
DO NOT STIR (very important)
Bake in preheated 375 degree oven for about 40 minutes or until the top is browned.
Serve warm with whipped cream or ice cream

We love this dessert because it's easy and delicious. Take a 28oz can of sliced peaches and dump them, juice and all, into a 9" x 13" pan. Take a Butter Pecan cake mix, and sprinkle it evenly over the peaches. Melt 1 cup of butter and pour it over the cake mix. If you like nuts, spread a handful or two of pecans over it. Bake at 350 for about 40 min. It will smell absolutely delicious and if you take it to grandma's and bake it there, you'll be the hit of the party!

Just last night I made gingersnap cookies, and instead of rolling them in plain sugar like usual, I used red & green. They look so festive & are so good! (I like mine soft).
If you have to go fancier than cookies, mix 8 oz of cream cheese with orange jello powder (don't mix water, just the mix! -- about 1/2 the box) and then roll that in dried cranberries - these is a sweet tasting cheeseball that tastes like Dreamsicles when you use vanilla wafers to spread it on. Yum!
