eggnog cookies

INGREDIENTS
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/4 cups white sugar
3/4 cup butter, softened
1/2 cup eggnog
1 teaspoon vanilla extract
2 egg yolks
1 teaspoon ground nutmeg
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).
Combine flour, baking powder, cinnamon, and nutmeg. Mix well with a wire whisk and set aside.
Cream sugar and butter until it forms a grainy paste. Stir in eggnog, vanilla, and egg yolks. Beat at medium speed until smooth. Add flour mixture and beat at low speed just until combined.
Drop cookie dough by rounded teaspoonfuls onto ungreased baking sheets, 1 inch apart. Sprinkle lightly with nutmeg. Bake for 20 to 25 minutes, or until bottoms turn light brown

1 Cup Soft butter or margarine
2 Cups sugar
1 Cup of Store bought Eggnog
1 teaspoon baking soda
1/2 teas ground nutmeg
5 1/2 Cups of Flour (sifted)
1 egg white, lightly beaten
colored sugar sprinkles

In a large mixing bowl, cream butter and sugar. Beat in Eggnog, baking soda and nutmeg.
Gradually add flour and mix well. Cover and chill at least 1 hour. On a lightly floured surface roll out half of the dough to 1/8 thickness. Cut into desired shapes, place on an ungreased cookie sheet.
Brush cookies with beaten egg white and sprinkle on colored sugar. Bake at 350 for 6-8 minutes. Remove to cool on a wire rack.
This should make about 16 dozen cookies.

Cream sugar and butter with a electric mixer until it forms a grainy paste. Add eggnog, vanilla and egg yolks and beat at medium speed until smooth. Add flour mixture and beat at low speed JUST until combined do not over
mix.

Drop by teaspoonful onto an ungreased cookie sheet 1 inch apart. Sprinkle with nutmeg and bake for 23 to 25 minutes or until bottoms are light brown. Transfer to a flat surface to cool immediately.

These cookies are better the longer they set. Ok to eat them right away but the flavor is better if they set at least 24 hours.

EGGNOG COOKIES

2 c. sifted flour
1/4 tsp. salt
3/4 c. sugar
2 tsp. rum extract
2 tsp. nutmeg
1 c. butter
2 tsp. vanilla
1 egg

Mix and sift flour, nutmeg and salt. Cream butter and sugar until fluffy. Add extract and egg. Mix well. Add sifted dry ingredients and mix well. Chill dough. Shape dough into balls, approximately 1 teaspoon per ball. Bake on ungreased cookie sheets at 350 degrees for 12-15 minutes. Cool and frost with rum frosting.

RUM FROSTING:

1/4 c. butter
1/2 tsp. vanilla extract
2-3 tsp. eggnog
1 tsp. rum extract
2 1/2 c. sifted powdered sugar

Cream butter, add extracts, add sugar gradually and mix well. Add eggnog. Mix well.
