Try Chef Gary for a classic California Roll demo: http://www.sushigary.com/sushiclass/sushiclass.cfm. Personally I just bought a book - that way I got the rice right-rice is very important to Sushi. I highly recommend you get a rice cooker and use short rice (like Calrose) and never wash it first or you will loose the sticky quality needed for success in Sushi rice also always use sweet Mirin to flavor your rice (the sugar and vinegar is a poor substitute). Check with your neighborhood Sushi house to see if they offer a weekend class as well, they are very popular here in Los Angeles and cost about $80 but you will make enough Sushi to have a guest join you after the 4 hour course.
