My mom use to make this all the time here is the recipe!!! it is not so easy!!

Ingredients:
2 cups plain flour
1 teaspoon baking powder
1/2 teaspoon salt
Cooking oil
2 eggs
1 1/2 cup milk
Powdered sugar

Directions:

Mix flour, baking powder, salt, eggs and milk together. Heat cooking oil in a deep fryer or skillet until very hot. Put batter into a funnel (be sure to cover spout with finger). Holding funnel over hot oil release some of the batter in a circular motion, then crisscrossing motions to form a funnel cake.

3-4 cups all purpose flour
3 eggs
2 cups milk
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
powdered sugar (for topping)
vegetable oil (for deep frying - heat to 375 degrees)

Beat the eggs, then add the sugar and milk. Sift 2 cups of flour, the salt, and the baking powder and add to the milk, sugar, and egg mixture.
Mix while adding more flour until the batter is smooth and not too thick. The funnel should have an opening of at least 1/2 inch and be able to hold around a cup of batter. Put your finger over the bottom and add about a cup of batter. Remove your finger and allow the batter to pour into the center of the oil. Be careful, the oil may splash!

Gradually swirl the batter outward in a circular motion, or criss-cross back and forth to make a cake about 7 or 8 inches round.

We used to draw our initials to personalize our cakes! Check it with a pair of tongs and turn it when the bottom becomes golden brown.

When both sides are done, remove with tongs and let it drip on a paper towel.

Funnel cake is often served with powdered sugar on top. You could also use molasses, maple syrup, or fruit preserves.

Enjoy!

A recipe straight from the Food Network:

1 cup water
3/4 stick butter (6 tablespoons)
1 tablespoon sugar
1/8 teaspoon salt
1 cup flour
1 cup eggs, about 4 large eggs and 2 whites
Vegetable oil, for frying
Powdered sugar, for topping

Boil water, butter, sugar, and salt together in a saucepan. Add flour and work it in until it is all incorporated and dough forms a ball. Transfer mixture to the bowl of a standing mixer and let cool for 3 to 4 minutes. With mixer lowest speed, add eggs, 1 at a time, making sure the first egg is completely incorporated before continuing. Once all eggs have been added and mixture is smooth, put dough in a piping bag fitted with a number 12 tip. Heat about 1 1/2 inches of oil in a heavy pan. Pipe dough into oil, making a free-form lattice pattern; cook until browned, flipping once. Remove cake from oil, drain on paper towels, and top with powdered sugar. Continue until all of the batter is used.

---------------------------------

Tips:

There are a few things a beginner at funnel cake making should know.

Do not crowd cakes in the hot fat. Just do a few at a time so the heat of the frying pan is not lessened.

If you are using a regular funnel, be sure the tube opening is at least 5/8". You'll need to use your finger to keep the tube closed and to control the flow, when using a regular funnel.

Practice funneling the dough.
Directions

Partially fill funnel cake pitcher, hold it over the hot fat and pour to make shapes like sticks, circles, spirals or whatever shape you like.

Fry the cakes on one side, turn and fry on other side until golden brown.

Drain on brown paper.

Dust with confectioner's sugar and enjoy while still warm.

A cheater's trick.......

Use pancake batter. Just make it a little thicker than normal. Dress it how you normally would.
