I got a recipe for holiday biscotti from Everyday Italian (Food Network show). Here's the link with the recipe: http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_35321,00.html?rsrc=search
I've seen other biscotti recipes and they're the same amount of flour, sugar, etc. When I baked the loaf it spread out like a pancake. What went wrong? Baking powder is new (dated 2008). I've seen a few posters on recipezaar.com and a couple of other recipe websites say they had the same problem but I don't see a solution?

BTW, the dough was very sticky.

I did in fact try this recipe a 2nd time figuring I must have done something wrong and the same thing happened. Funny thing is when I saw it spreading out again and I took it out of the over and shaped it back into a loaf and the cookies tasted fine. But I don't want to have to do that. These other recipes look good too but since the amount of moist ingredients is basically the same as mine I'm guessing I'll run into the same problem. Was your dough sticky?

Sunshinegirl, Rachael Ray does not bake. And her website certainly does not have any biscotti recipes.

1 cup butter, softened
1 3/4 cups sugar
2 eggs
2 teaspoons almond extract
5 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cardamom
1 cup sour cream
1 cup chopped almonds
DIRECTIONS
In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine the flour, baking soda, salt and cardamom; add to the creamed mixture alternately with sour cream. Fold in almonds.
Divide dough into fourths; shape each portion into a ball. On two greased baking sheets, roll each ball into a 15-in. log (two logs per pan). Bake at 350 degrees F for 30 minutes or until lightly browned and firm to the touch.
Transfer to a cutting board; cut at a 45 degrees F angle with a sharp knife into 1/2-in. slices. Place cut side down on greased baking sheets. Bake for 5-6 minutes on each side or until lightly browned. Remove to wire racks to cool. Store in airtight containers.

INGREDIENTS
2 cups white sugar
1 cup butter, softened
4 eggs
4 1/2 cups all-purpose flour
4 teaspoons baking powder
3/4 teaspoon salt
1/3 cup brandy
1 1/2 teaspoons anise extract
1 teaspoon vanilla extract
1 cup almonds
2 tablespoons anise seed



DIRECTIONS
Preheat oven to 350 degrees F. Line 2 cookie sheets with parchment paper or foil.
In large mixing bowl, beat sugar and butter until light and fluffy. Add eggs one at a time, beating well after each addition. Combine brandy, anise extract and vanilla in a small bowl or measuring cup. In a medium bowl, combine flour, baking powder and salt. Alternately add dry ingredients and brandy mixture to the butter mixture, beginning and ending with the dry ingredients. Stir in the almonds and aniseed.
Drop dough by spoonfuls onto prepared sheet, forming two 2 x 13-inch long strips on each sheet. Smooth dough into logs with moistened fingertips.
Bake about30 to 35 minutes or until golden and firm to the touch. Place cookie sheets on racks and cool completely. Reduce the oven temperature to 300 degrees F.
Cut cooled logs on the diagonal into 3/4-inch thick slices using a serrated knife. Place slices on cookie sheets.
Bake for about 20 minutes, turning after 10 minutes, until dry and slightly brown. Remove to a rack and cool.

I think if you would like to you should try it out. A lot of premade vegetarian meat replacements have gluten(which is what I assume your allergy is), but there are still many things you can eat. They already have replacements for wheat things with rice and potato flours and such. You could eat many vegetables, beans, nuts, soy products. You can buy TVP or textured vegetable protein, which is made from soy, as a replacement for ground meat in chilis, soups, stews, sloppy joes, and things like that. You can make bean tacos or burritos. Sandwiches. Lots of stuff. I'm not help. Make sure you don't eat seitan, it is made from wheat gluten.

I can't imagine, the recipe seems fine, I hate when that happens. Wasting all that money on ingredients. I would try another recipe!~~
