here is a great recipe for crispy coffee cookies
INGREDIENTS
1 cup sugar
3/4 cup vegetable oil
1/3 cup instant coffee granules
2 tablespoons hot water
2 eggs
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
Additional sugar
DIRECTIONS
In a mixing bowl, combine sugar and oil. Dissolve coffee in water; add to sugar mixture and mix well. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; gradually add to the sugar mixture.
Roll into 3/4-in. balls, then roll in additional sugar. Place 2 in. apart on lightly greased baking sheets; flatten with a fork. Bake at 400 degrees F for 8-10 minutes or until edges are firm. Remove to wire racks to cool.

Coffee Bean Cookies
2 1/2 c flour
1 tsp baking soda
1 tsp salt
1 c shortening
4 oz box instant chocolate pudding (or vanilla flavor)
1/4 c white sugar
3/4 c brown sugar
1 tsp vanilla
2 eggs
1 c walnuts, chopped
1 1/2 c chocolate covered coffee beans (original calls for chocolate chips)
Preheat oven to 375 degrees F.
Mix together the flour, baking soda and salt in a medium bowl. Cream together shortening, pudding, and sugars until well blended. Add vanilla and eggs.
Slowly incorporate flour mixture. Add the walnuts using your hands, it almost has the consistency of brownie dough. Roll into 1-2" balls and stuff with one or two coffee beans. Bake for 8-10 minutes. Add one more beans in the center after baking. Makes 32 cookies

4 c. flour
1 c. nuts
FROSTING:
3/4 c. butter
1/3 c. milk
2 1/2 c. powdered sugar
1 1/2 c. brown sugar
Cream together shortening and sugars. Beat in eggs and baking powder. Alternate flour and coffee until mixed well. Drop by teaspoon onto ungreased cookie sheet. Bake at 350 degrees for 10 minutes. Cool.
For frosting, melt butter; add brown sugar and cook 2 or 3 minutes. Add milk and bring to a full boil. Cool. Gradually add powdered sugar. Beat until smooth.

3/4 c. butter, softened
1 1/2 tbsp. instant coffee
1/2 tsp. baking soda
1 tbsp. water
1 tsp. vanilla
1 3/4 c. flour
1 c. finely chopped nuts
Confectioners' sugar for rolling cookie into
Cream butter. Gradually beat in 1/3 cup confectioners' sugar and continue beating until light and fluffy. Dissolve instant coffee and baking soda in water. Add to butter mixture with vanilla and beat well. Stir in flour and nuts. Shape into small balls and place on ungreased baking sheet. Bake at 350 degrees for 15-18 minutes. Roll each cookie in additional confectioners' sugar while still hot. Makes about 3 dozen.
