how to keep this from happening...add something to water?

If you add salt to your water to boil eggs it will make the eggs a lot easier to peel...I was told that by my Mom and i have always practiced that and it works................also when you crack a boiled egg,crack it all around the egg and get the membrane that little white, coating right under the shell,and get that and the shell will come right off.

next time you want to make hard boiled eggs, add table salt to the water. I usually add a tablespoon or two. The shells will almost slide off with no or very little loss of your egg. The salted water does not make your eggs salty either.

Also don't use really fresh eggs for boiling. The fresher the egg, the harder to peel, If you are planning something like devilled eggs, buy eggs a week or so in advance, or choose a carton with a sooner best before date

Vinegar and salt. Start eggs in cold water put in 1/2 cup vinegar and 2 tb salt bring to boil. Set off heat and cover pan for 10 mins. Put into to ice water and peel when completely cold.

After boiling your eggs, Immerse them in COLD water, for 10 minutes or so. This will help with the glue effect you described, yopur eggs will peel easily

make egg salad..
next time, boil the eggs, when they are done, drain off hot water, run pan of eggs under cold water, until pan turns cold. let sit until the eggs cool down a little. drain off cold water. with lid on, shake like heck. will loosen shells and they will fall off leaving the eggs in tact..

let the eggs soak in cold water untill you are ready to peel them, The longer they are out of water the harder they are to peel.
