you swirl the wine glass to mix up the wine so that it releases it's aroma or smell stronger than if it were just still. if you notice when someone swirls the wine they smell it during or right after.

They swirl a cup of wine to bring the sugars to side of glass and check for thickness .

if you open the bottle about an hour or so before serving you won't need to swirl as much. but yep.. swirling allows the wine to breathe. or if you're a wine snob you say, "to release the bouquet". heheh.
