I am serving meat (filet, several types) on a table grill for Xmas dinner. I'd like it to have a nice crust; how far in advance should I brown the meat and how should I store it before serving it to finish on the grill?

Browning should take very little time, and the aroma will tantalize your guests. So, do the browning right before cooking.

I would not brown it and store it. If you want a nice crust, season and sear each side before putting in on a grill.

Each particular MEAT has a different Brown RATE!

They will all come to YOUR HOME for dinner, just serve a Good Meal = and DON'T WORRY ABOUT IT BEING = PERFECT!

as you are serving filets i would not cook it in advance as it is going to be a substandard product .....it dont take long to do filets and i am sure you could schedule a few extra minutes to grill them properly and end up with an excellent product........

The browning will release such a wonderful aroma that you should NOT want your guests to miss out on.
