usind Adobe 8 how to select encoding that makes documents readable?

"Adobe 8" is kinda generic, as Adobe has a huge line of products...
Is it Acrobat? Reader?
If its Reader, all reader does is read files, you can't create a file, if its Acrobat you can just save it as a PDF
