I don't really have a recipe, but this is what I do ...
Wash the potatoes, cut into halves or quarters. Place in the slow cooker along with the roast. Add carrots (1 pound), a cut up onion, about half a cup of cut up celery, and tomatoes (I used the canned ones). Add about 3/4 cup of red wine. Spices would be up to you ... salt & pepper, ... for an italian taste - Italian herbs ... for a more Tex-Mex version - cumin and chili ... for a New Orleans version - add some cut up green pepper to the above mix and some Bayou spices.

Beef Stew
Ingredients:
1 pound cubed beef stew meat
1/4 cup all-purpose flour
1 tablespoon paprika
salt and pepper to taste
1 1/2 tablespoons teriyaki sauce
1 onion, chopped
3 carrots, sliced
1 stalk celery, sliced
2 potatoes, cubed
1/2 pound mushrooms, quartered
2 cloves garlic, minced
1 bay leaf
1 1/2 cups beef broth
1/2 cup peas
Preparation:
Place beef stew meat into a slow cooker.
In a small bowl, mix together the flour, paprika, salt and pepper; sprinkle over the stew meat, stirring to coat.
Stir in the rest of the ingredients except the peas. Cover and cook on low 6 hours, stirring occasionally. Add the peas in the last hour.

Well, you can cut up your veggies I use onions, potatoes, carrots and turnips (I think you guys call em rutabaga"s) add water, salt and pepper. Then I cut up a green pepper and mix that in, it just gives the stew a nice flavor. I usually serve mine with crusty rolls.. If it's a slow cooker, I guess it would take about 6-8 hours to be done. It can be done quicker on the stove, but I like the tenderness of meat when it's slow cooked.

1 pound stew beef or round steak, cut in 1-inch cubes
1 can condensed tomato soup, about 10 1/2 ounces
1 tablespoon tomato paste
1/2 cup water
1 tablespoon Gravy Master or Kitchen Bouquet
2 to 3 medium potatoes, cubed
3 medium carrots, peeled and diced
1/4 cup chopped onion
1/2 teaspoon seasoned salt
1/2 teaspoon black pepper
1 cup frozen peas (add last before serving)
PREPARATION:
Combine stew beef, tomato soup, tomato paste, water, Gravy Master, potatoes, carrots, onion, seasoned salt, and pepper in crockpot. Cover and cook on LOW for about 8 to 10 hours. Add the peas in the last 30 minutes. You can also add other vegetables if they are available.
This is REALLY good with Bisquick dumplings on top. Follow the recipe on the Bisquick box and drop the dumplings on top of the hot beef stew, recover with the lid, turn to HIGH, and cook another 1/2 hour or until dumplings are cooked.
It's also good with any type of hot rolls.

2 lbs Beef stew meat (or the beef that you have)
New potatoes
One large Sweet Yellow onion, cut in 8ths
One small bag of baby carrots
Fresh mushrooms, optional
1 pkg Dry vegetable soup mix
1 can cream of mushroom soup
2 soup cans water
--------------------------------------------------------------------------------
Directions
Sear meat in cast iron skillet, making sure to brown all sides.
Cut up new potatoes if large or use whole if small
Cut onion into 8ths
Add meat, potatoes, carrots, mushrooms in large crock pot. Sprinkle dry soup mix over all.
Dilute soup in 2 cans water and pour over mixture. Cover and cook on low for 8 hours.
Additional water may be added or needed to adjust consistancy.
