When I make homemade bread its always soft and fluffy but if it doesn't get eaten by that night then the next day it looses its freshness. I know that store bought bread has preservatives in it to make it stay softer longer but is there anything I can do at home to keep that softness longer?

put a plastic bag like thing for food on it and put in fridge or maybe even freazer

From your local health food store you can get Xanthan gum! Add 1tsp per loaf and increase water by 1tbl. The Xanthan 'binds' water into the bread and water loss is what makes bread stale. The price tag on the Xanthan may scare you (typically sells for around $10 per half pound) but don't let that scare you as it lasts forever if kept in cool air-tight storage and is used in small amounts per loaf. In the US most every donut shop has Xanthan in their dough mix to extend the shelf life of their donuts! Putting bread in the fridge ruins the texture but bread freezes really well. Wrap your loaf with aluminum foil and then wrap that with plastic and freeze for up to half a year. To defrost the bread remove the plastic and put the foil wrapped bread into a medium oven for 10-15 minutes and it'll come out of the oven like you just fresh baked it! This is an old trick that some restaurants use to serve 'fresh-baked' bread without having to keep a baker on staff full time.

Yes...wet your bread, not soak it, but dampen it and wrap in foil and re heat in oven for 15 - 20 minutes should come out hot, fluffy and ready to eat again.

I have a bread machine with the 'same' problem, and this works for us, with the uncut I stab butter and garlic into it too, and out comes hot garlic bread...yummy!

Eat it all the same day. I would. I love fresh baked bread. Right out of the oven, still hot and buttery...

I believe it's the glutens that bread manufacturers use that keeps it 'fluffy'...the above answers are all good for your bread though.

Well I use potato water when making my bread. Freeze the loaves that are not going to be eaten right away.
