Easy, Cheesy Artichoke Appetizer

36 servings
2 (8 ounce) cans refrigerated crescent dinner rolls (can use reduced-fat)
3/4 cup shredded mozzarella cheese
3/4 cup grated parmesan cheese
1/2 cup mayonnaise (light is OK, not no-fat)
1 (14 ounce) can artichoke hearts, drained and chopped
1 (4 ounce) can chopped green chilies, drained
1 (4 ounce) can sliced black olives
1-2 dash Tabasco sauce
Preheat oven to 375.
Unroll both cans of crescent roll dough onto a jelly roll pan (15x10).
Press into sides and bottom, until pan is covered with a solid crust.
Bake for 10 minutes.
Combine remaining ingredients, mixing well.
Spread evenly onto the baked crust.
Bake for 15 minutes, or until cheeses are melted.
Allow to stand 5 minutes before cutting into squares to serve

Mini-Quiches
Ingredients
8 oz Cottage cheese-small curd
1/4 c Sour cream
4 oz Shredded sharp cheddar cheese
1/2 c Bisquick or the like
1/4 c Melted butter
3 Eggs
Preheat oven to 350 degrees. Mix all ingredients with
Electric mixer. Grease mini-muffin tins or use Teflon ones.
Fill 3/4 full. Bake for 15-20 minutes or until brown.
Hints: Add onion, bacon, mushrooms,etc. May be frozen.
Reheat at 300 degrees or microwave for 3 minutes on high.
Note: These are great! Be sure to add cooked bacon and
Some diced onion. This recipe only makes about
1 1/2 Dozen so be sure to at least double! Great

Fruit Appetizers
Brie and Fruit: Warm a round of Brie cheese in a 325 degrees F oven for 10 to 15 minutes. Serve with apple and pear wedges or crackers
Fruit and Dip: Thread fruits such as pineapple chunks, apple wedges, pear slices, and orange sections onto wooden skewers. Serve with a curry dip made from equal parts mayonnaise and sour cream, seasoned with curry powder.
Pesto Roll-Up: Separate 1 package refrigerated crescent rolls into triangles and spread with purchased basil pesto. Cut each triangle in half, making 16 long triangles. Roll up triangles and place on ungreased baking sheet. Bake at 375 degrees F for 12 to 15 minutes or until golden
Fruit with Prosciutto: Wrap strips of prosciutto around apple and/or pear slices or melon balls
Simple Smorgasbord: Spread water crackers with soft-style cream cheese with chives and onion. Top with thinly sliced smoked salmon and fresh dill. Or spread rye crackers with soft-style cream cheese. Top with canned sardines and finely chopped tomatoes.

Super EASY - Super TASTY - Shrimp Dip
One 6 oz pack Philadelphia Cream Cheese, room temperature
One bottle of Cross and Blackwell Shrimp Cocktail Sauce
One small can of tiny shrimp
Spread cream cheese evenly onto a dinner plate.
Spread entire bottle of cocktail sauce evenly over cream cheese
Drain and rinse tiny shrimp and spread evenly over cocktail sauce.
Serve Ritz Crackers
NOTE: leave out a couple of cocktail knives so people can scoop this up and put it on the cracker.
YUMMY PICKLE ROLL-UPS
One jar Armour Dried Beef
One 6 oz pack Philadelphia Cream Cheese, room temperature
One small jar Dill Pickle Spears
Separate beef. Spread thin layer of cream cheese over each thin beef slice. Roll around a dill pickle spear so the cream cheese is on the inside facing the pickle. Pierce with toothpick through center to hold.
QUICK SALSA DIP
One large container of Sour Cream
One large container of Hot or Medium Salsa
In medium bowl, thoroughly mix the two ingredients. Serve with tortilla chips!

Tortillas or wraps, spread with some flavored cream cheese or cheese spread, then put turkey, roast beef, ham, dried beef, whatever meat you want or maybe some veggies like marinated artichoke hearts, spinach, peppers. Roll them up and wrap them in plastic wrap. Chill. Then slice for Pinwheel appetizers.
Another one of my favorites is to take wonton wrappers, fit them into small tart pans. Place in the oven for a few minutes to help them hold their shape. Brown up some some ground meat (your choice, stir in some cheese and other seasonings such as peppers, or veggies. Place in oven to finish. Wonton Tartlets.
Or just make the wonton tarts and stuff with you favorite dip recipe.

When I want to get fast and simple, I go right for the smoked salmon. Those thin, thin, slices you can lay out on a plate with a couple of lettuce leaves, and maybe a few thin slices of radish and a couple of little wedges of tomatoes (I love cherry tomatoes for something like this, carefully halved) Or you can roll slices of the salmon, with a little dob of minced crab inside.
The idea, of course, isn't to give your guests anything too filling, and wreck their appetite for what follows You just want to get their taste buds "tuned up". There are plenty of choices, but when the situation calls for "nice and easy" smoked salmon, prettily presented on the plate, does it for me lol.

Sausage & cheese with crackers. To dress it up, use a small cookie cutter & insert the cheese shapes into the sausage. That way nobody has to stack the cheese on the sausage on the cracker. And it looks great!

How about a nice vegetable plate. You can either cut up the vegetables yourself or buy pre-cut to save time. Serve with your favorite dressing. Fruit and cheese plates are also quick and easy. You can even buy edible flowers to decorate your plate and make it special.
