I'm doing the same thing myself right now...deviled eggs.
What I do is this:
While eggs & water are in the pan, I add a lot of table salt to the water. It makes peeling them much easier. Then when they're done boiling, I pour out the water and run cold water continuosly in the pan of eggs for about 15 minutes to cool them. The shells won't burn your hands, but the insides will still be hot. I never have trouble peeling eggs this way.
Happy cooking!

Dear Marydave
It is better to peel hard boiled eggs in a bowl of water while they are still warm, holding the eggs under water while you peel. This keeps the cooked albumin from sticking.

Happy Holidays mary-dave!
When I boil eggs, I put a dash of salt in the water, boil hard, when they are hard boiled, I take the pan put in sink and run cold water in it for about 1-2 minutes, this will cool down the eggs and the water. let set for about another minute, then turn your water on to a small stream, crack the egg on the pan and let the water almost help you peel the egg, it will come off real easy, plus all of your egg peelings will be in one pan, compost or dispose easy.

Older eggs are easier and neater to peel. But, peel then while they are a little warm letting cold water run on them as you peel. Just did some myself yesterday.

Cool them a little but peel while still warm. Crack it just enough to start (not all over the egg) then the shells will come off in good size sheets.

If you run cold water over them to cool them off, then put them in freezer for 15-20 min., they will peel much easier.

right after cooking them, drain all the water out of the pan, add cold water until the pan is cool, let sit in cold water for a few minutes. drain, put lid back on, shake the dickens out of it with the top on, the shells will crack, and peel right off..

Peel them when they are as warm as you can stand them without getting burned.

Warm. I just answered a question on this one. This never fails for me.

Cold-ish, or you might be looking at some potential burns.
It's okay to do it while still warm.
