Doing cooking for Christmas dinner today and just made the pumpkin pies...Noticed the mixture was a lot runnie4r than usual, but didn't think much of it. Went ahead and poured it into the pie shells, haven't put them in oven yet.
Then, got the can out ( used the easy pumpkin pie mix that you only add 2 eggs and a can of evaporated milk) and realized that the ev. milk can was a 12 oz. can instead of a 5 oz/ can that the recipe called for.
Should I just throw it all out or can I still bake it? Will it still set up and turn out ok? Or, is there anything I can do to fix it if I pour the mixture out of the shells and back to a bowl and add something else??
Thanks in advance!!

The only thing I can think of is to pour it out of the shells into a mixing bowl, add 6 eggs well beaten, beat together, pour into a buttered oven proof bowl and bake in oven like a custard.

My pumpkin pie mix calls for a 12-oz can of evaporated milk and 2 eggs, so you should be okay. If you want to pour it out of the shell and make this recipe, to be on the safe side, you could try it:
3/4 c. packed brown sugar
1 1/2 tsp. cinnamon
1 tsp. ground ginger
1/4 tsp. nutmeg (I leave it out most times)
1/4 tsp. salt
Pinch of ground cloves (I also leave that out)
3 Tbsp. unsulphured molasses
2 eggs, lightly beaten
1 (16 oz) can pumpkin
1 (12 oz) can evap. milk
2 tsp. vanilla
1 (9") pie shell, partially baked
Preheat oven to 375F. Mix sugar and spices together, add to pumpkin mixture. Pour into pie shell, cover edge with foil. Bake 45 minutes. Uncover edge and bake 10 more minutes, or until filling is just set.
***I usually have to bake for a little over an hour, and the center of the filling still doesn't look set when I take it out of the oven. Leave it to cool w/out moving it for at leat 20 minutes and it'll set.
GOOD LUCK!

You could pour the mixture back into a bowl and add another can of the pumpkin pie mix and eggs, but not additional milk. You will also need additional pie shells. Good Luck and Happy Holidays!!

Dear Spoiled D
you can try this to fix your pie. Pour it bake into bowl, in seperate bowl beat one egg,add to mixture along with 1 tsp. of flour and a 1/4 cup of heavy cream. Mix throughly and put in shells and bake. You may need new shells depending on how long they were sitting.

I've never tried anything like this, but maybe you can just add a thickener? Try mixing in 1 tbsp of cornstarch (put a little bit of your pie mixture in a bowl, mix in the cornstarch until fully dissolved, then mix the liquid into the rest of your mixture) and baking as normal.

Pour the Pumpkin goo into a sauce pan and reduce the liquid out of it till it gets to the right thickness, then let it cool before you pour it back into the shells or it'll sog them out
