Having never read the book nor seen the movie, this is a long shot, but:
Sauce cepada is real, though I know it as cepeda; it is a sauce made in Spain in the area of Salamanca.
A Chukkath is Hebrew for (perfect) red cow, a rare being, a cow without blemish in any way, used for "perfect" sacrifices to God. So maybe, in the book, it is supposed to be beef under glass--like pheasant under glass?
The sirian one, I don't know, but it sounds like a take-off on or play on latin taxonomy terms, perhaps for a dinosaur or rare bird?

In a perfect world, the red meat would be the best option, but in the real world, a parent has to deal with what is best at the time they need to make the decision. The red meat may be more nutritious but he has to look past that and find the option that will feed all his kids at once and get them through to the next day, when he may be able to do a bit better for them. Even though you say that you made up these facts, the sad thing is, this goes on every single day with thousands and thousands of families. Hard decisions need to be made, and often the decision made is not a great one, but it is the one that will keep them alive.

Well i know you can get strawberry shortcake and Cheesy Poofs....And I know there was a reference to steak and iced cream in "Pollyanna" but this stuff i dont know about....My glasses just arent that thick....
