Cut the pepper in half, clean them out and stuff them with cheese and half a strip of bacon. Broil till bacon is done.
Also try a mixture of cooked Jimmy Dean sausage and cream cheese. This is a great appetizer.
If you're a tuna fan, stuff with tuna and sprinkle with cheese.

1 pound lump crabmeat, picked over for shells and cartilage
1 teaspoon chopped garlic
1/2 cup chopped jalapenos
1/4 pound Monterey Jack cheese with jalapenos, grated
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
1/2 teaspoon salt
1/2 cup mayonnaise
2 ounces Parmigiano-Reggiano cheese, grated
1 recipe Toasted Croutons, recipe follows
Preheat the oven to 350 degrees F. Combine the crabmeat, garlic, jalapenos, Monterey Jack, Worcestershire, hot sauce, salt, and mayonnaise in a medium-size mixing bowl. Toss gently to mix. Spoon the mixture into a medium-size mixing bowl. Sprinkle the Parmesan cheese evenly on the top of the crabmeat mixture. Bake until golden brown and bubbly, about 25 minutes. Remove from the oven and let sit for about 5 minutes before serving with the croutons.

salsa
1/2 cup diced onion
1/4 to 1/2 jalapeno pepper
finely chopped
1 cup diced tomato ( about 2 med )
2 - 4 cloves garlic
fresh cilantro or parsley to taste
salt and pepper to taste
this is a great veggie dip or you can use it to use as a dip for
deep fried mushrooms onion rings cheese or what ever
or make a layered dip
hamburg mixed with taco seasoning on the bottom
sour cream next if you feel brave add little cream cheese to the sour cream
next add the salsa that is above
then finely shredded cheese what ever one you like the best
hint the finer the cheese the easier it will be for your guests to pick it up with chips
i put this in a 2.5 " deep tray and have sm plates beside it for people to serve themselves and a bowl of corn chips or sm pieces of dark toasted breads

Black Bean Soup With Jalapenos
Yield: 8 Servings
Ingredients
8 jalapeno chiles, stems and
-seeds re; moved, chopped
1 tb dried crushed red chile,
-seeds incl; uded
2 c black beans, sorted and
-rinsed
2 tb bacon fat or vegetable oil
2 md onions, chopped
4 cloves garlic, minced
1 lg ham hock
1 c canned tomatoes, chopped
2 ts ground cumin
1 ts ground epazote (optional)
1 ts ground coriander
1/4 ts ground cloves
1 tb red wine vinegar
6 to 8 cups water
3 tb tequila (optional)
Instructions
Serves 8
Sour cream for garnish
Cover the beans with water and soak them overnight.
Saute onion and garlic in bacon fat until soft.
Combine all ingredients, except tequila and sour cream, in large pot
and bring to a boil. Reduce heat and simmer for 2 to 3 hours or
until beans are soft.
Remove ham hock and shred meat.
Divide soup in half, puree half of it and add back to the remaining
soup. Add shredded meat and simmer for 15 minutes or until thickened
to desired consistency.
Remove from heat, stir in tequila, garnish with sour cream, and serve.

I know this sounds odd, but my wife was making candy last night and I dipped a pepper in the melted chocolate and it was awesome. Just let the melted choc, cool down a bit. Decided to call it hot chocolate....

how about a layerd taco dip??? with refried beans on bottom, some sour cream top with tomatoes, onions, little strips of lettuce, olives and cheese and some of the peppers
